Well...after a wildly outrageous dinner on Friday night...Saturday morning was started off with some classic eats:) Courtesy of The Pop Shop in Collingswood, NJ...
How cute is this place?? :) The Pop Shop is known for their PAGE length list of grilled cheese variations (they were even featured on "Throwdown with Bobby Flay"!!)...
Buttt.....we were up bright and early to enjoy their breakfast...and I was QUITE excited to try one of their newer menu items...are you ready?????...Cinnamon Roll French Toast...
As a LOVER of all things CINNAMON, you could IMAGINE how much I loved this sugar breakfast!
And when this dish showed up with a GLAZE....well this just skyrocketed up my list as one of my most favorite breakfasts ever:) hahahahahahhahaa....warm, cinnamon-y and oh-so-good:)
Scott had a pretty good breakfast himself! He had an omelet with avocado, tomatoes, onions & peppers. If I was a fan of eggs, I would say this looks pretty yummy;)
And after breakfast, we hit up the farmer's market to stock up on our weeks worth of produce...
Even if I ended up using almost HALF of it with this dinner;) In keeping with my 'end of summer' theme of the next 2 weeks (ONLY 2 WEEKS LEFT!!! wohooooooo...all of my orange flowers are on STAND BY! :)....with our fresh produce, we made "End of Summer Pasta alla Norma"
I started with my newest purchase of the week from the market...Sicilian eggplant!
The woman who sold it to me said it was sweeter and had less seeds than a normal 'plant....I can't exactly state if it was 'sweeter' or not...but it does look LESS overrun by seeds....
I diced up the eggplant and added in my JERSEY FRESH grape tomatoes and let that cook down for about fifteen minutes....
And "cook down" it did, indeed! ...
And speaking of 'cook down'....I also had a bag of spinach leftover in my fridge so I decided to throw that on top of the eggplant/tomatoes and covered it with a lid to let THIS cook down as well....
Seriously fresh spinach, I love you and all, but if you are going to steam or cook fresh spinach it is sooooooo much more cost effective to use frozen! Save the fresh for salads and GREEN MONSTERS:) As you will see my MOUND of spinach wilted to this:
hahahahahahahahah....:) I'm on to you, spinach;)
The eggplant almost completely dissolved down to create an almost creamy sauce...all topped with the fresh basil laced ricotta cheese made for a delicious and healthy dinner!
This was yet another great way to use up whatever vegetables you have leftover in the fridge, but I must say we were big fans of the tomato/eggplant/basil/spinach combo:)
Well...like I said, 2 more weeks of 'official summer' as far as I'm concerned;) I'm already dreaming of all the cinnamon delights of the near future;) Have a great Monday!
