2 for the Price of One....

So along with our dinner, I MUST show you the salad I had for lunch yesterday since it was CRAZY TASTY:)  I used up almost all of my farmer's market herbs for the week... ;)
Along with my lettuce, I chopped up: 
  • Dill
  • Basil
  • Chives
  • Strawberries
  • Juice from half of a lemon whisked with a few drops of olive oil
  • Salt & Pepper

Tart, tangy, sweet & crunchy...this salad was a WINNER:)  And a good way to make room in those veggie bins:)  I LOVE finishing stuff up!  My basil bouquet lasted exactly 3 days ;) hahahahahhaha....

Ok...now back to the main event:)  For dinner last night we had the world's tiniest Shallot Butter Pork Chops with.....dare I say it?  The greatest side ever???? ;)

Well...I guess it was a good thing that the 'chops were sorta on the small side....to compensate for the luscious topping:)  Scott grilled the pork chops drizzled in chive, thyme & rosemary olive oil  (call the presses: My rosemary plant is STILL STANDIN FOLKS!!!!!  This might be a new record!)  Anyway...then the chops were topped with butter mixed with diced shallots & lemon zest.  Then you let them sit for a few minutes to let the butter melt into the chops....
These were excessively delicious...however, is that really shocking???  I think my shoes would taste good coated in butter & herbs;) hahahahhahahhahaa

But, my dear readers, it allllllllllll paled in comparison to the side I had been waiting to try for AGES!!!!  I present to you:  Southwestern Couscous Salad!!!!!! :)
  • 1 cup whole wheat couscous cooked in 1 cup water, refrigerate overnight 
  • 2 ears of corn, grilled, cooled & 'de-eared' ;)
  • 1 diced avocado
  • 1 can of black beans, rinsed
  • 1/2 red pepper, diced
  • 1 red onion, diced, sauteed & cooled
  • 1 handful cilantro, chopped
  • Juice of 1 lime
  • Drizzle of olive oil
  • Salt & Pepper

Mix all of the ingredients together and let it CHILLLLLLL (the colder, the better!) 
You know the love of our normal favorite couscous salad......well, this was proclaimed 'just as good, if not better!'  The avocado was an 11th hour addition and I just thought it took it over the top!  Think guacamole, but BETTER:)  hahahahahahahaha....
Did I convince you to go home and make this ASAP???  If so, you will NOT be disappointed! :)

Andddd...I rounded out my delicious evening with a sample of my Amish Friendship Bread (I couldn't wait till morning:).  SOOOOO good...sweet & cinnamon-y!  (Thankfully...if not, that would have been a waste of 10 days;) hahahhahahahahahha!

Andddd...my night didn't end there, as I had to whip up a very special dessert last night so all of its flavors could "meld" for TONIGHT:)  I'll give you a small preview for now:
