Well...I had a little trouble uploading my pictures for the day, so its been QUITE a delay...as I was SUPER excited to tell you about this one!! And now I can FINALLY show you our most interesting meal of the week so far!!!!
What's so special about Pizza, right??? Yes, it's good & all...but interesting???
YES!!!! And the secret ingredient of the evening was.....drum roll:
Cool, right???? And who doesn't love Phyllo dough to begin with?? It's flaky, crispy deliciousness:)
So I followed Cooking Lights recipe for Phyllo dough pizza and got busy layering & layering the dough....
A LOTTTTT of layers! And how awesome is THIS....in between every FEW layers was a sprinkle of Parmesan & feta cheese! ("Mediterranean SPICED feta" from Trader Joe's = AMAZING!)
Then it was time to top the dough with some sliced grape tomatoes...
And then into the oven it went.....and not to mention: Phyllo dough is PERFECT "Toaster Oven Size"...;)
A mere 20 minutes later emerged THIS beauty...
And finished off with some fresh basil for yet ANOTHER layer of fabulousness....
Talk about redefining the term "Pizza Pie"....this had the flaky, tender crust from the layers of cheesy dough, with the simple tomato/basil and more cheese topping...this was even better than we thought it was going to be!! Crispy, fresh & fabulous with a LOT of bite from the feta!
Although, it was a bit of a "fork & knife pizza" :) Even with all of those 97 layers, it's still a bit on the flimsier side;) hahahahahahaha....
And yet another perk of this meal: I think we only had 2 plates and a cutting board to clean up when we were done. Not too shabby for one of the QUICKEST ways I've ever made pizza, short of throwing one of those frozen gross deals in the oven! Try this one out! (you know you have that spare roll of phyllo dough in the back of your fridge! Or is that just us???:)
Well...I have one more "repeat" and vegetarian meal for the week before it's time to head to "Moo, Moo, Beef, Beef" City;) hahahahhahahaha....Hope your having a GREAT week!
