So, not only did I nod off the other night and woke up to an already cooked dinner...BUT I also woke up to find that Scott had even taken pictures for this blog in his cooking process! :) (Did I say he's the best, or what???)
So without further ado....I present to you "Chicken Stir Fry: By Scott" :)
First, he added some cubed chicken to a hot pan and let that cook for a few minutes before adding a RAINBOW's worth of colors:
- Snow Peas
- Red Pepper
- Yellow Pepper
- Red Onion
- Baby Corn (cause who doesn't LOVE baby corn???)
- Carrots
- Broccoli
- Bean Sprouts
And mixed it all up with this sauce:
And stirred, simmered and let the veggies wilt from this:

And I woke up JUST in time to serve myself up a heaping plate's worth! The Honey Garlic sauce wasn't as great as the Garlic & Green Onion one, but it had a nice SUBTLE taste (just toooo subtle for me). But I loved, loved, loved having all of these great vegetables, which felt super healthy...
Oh yeah, and the 'already cooked' portion didn't hurt any either! Thanks for givin me the night off, love! :)
Well...we had a mix of stir fry, leftovers & eating out this weekend, so I'll have a few more things to show you tomorrow since I know we're having a 'repeat salad' again tonight:)
