Usually we use whatever we have laying around, but for this version of Scott Soup you:
Crisp 3 strips of turkey bacon in a large pot. Once their browned and crispy, take them out of the pot and crumble in a dish. To the pot add an onion, garlic and some chopped leeks. Let that cook for a few minutes and then a box of chicken broth and 2-3 cubed potatoes. Cook for about 20 minutes, or until the potatoes are cooked. Add the bacon back to the pot along with a small can (those 14 oz.-ers) of diced tomatoes, kidney beans, salt, pepper and thyme and cook until it's warmed through. Tada! Scott Soup! :)
