Roasted Cauliflower Salad

This recipe is really quick & really tasty. I'm a big believer in that a little prep work goes a long way, and this is a good example. I portioned this one recipe to make enough for 2 lunches and one side dish for dinner this week. Plus, I get Scott to eat cauliflower, which is a victory unto itself ;)
