Arepas with Shredded Pork

I stumbled on a recipe for arepas in my Cooking Light magazine over a year ago and was intrigued, but when I actually had these in Costa Rica last year, I was hooked! They're little golden cakes from heaven:) And don't let the name scare you! These are super easy and can be topped with anything!! Here was our version topped with shredded Caribbean BBQ pork & caramelized onions...

We had sauteed peppers as our side, and I just thought all the colors looked so pretty in the pan:) ...I have issues, I'm ok with it ;)
