This is the perfect 'middle of winter' dinner:) We actually skipped the whole step of cooking the meatloaves in a skillet, and just threw them in the oven for 40 minutes.
For the sweet potatoes, I baked them for 45 minutes at 400. Scooped out the middles and mixed them with a little butter, brown sugar, maple syrup and lots of cinnamon:) I filled up the potato skins and sprinkled em with a little more brown sugar and baked for 15 minutes...they were sooooo good!
