Here was my quesadilla before it was capped off and sent into the grill press:) We used whole wheat tortillas, reduced fat colby jack cheese, black beans, scallions, cumin and some avocado....oh yeah, and the leftover meatloaf, which gave it some extra flavor and a little BBQ kick...
We rounded out the meal with a side of sauteed peppers. It was actually a pretty colorful meal between the green avocado, cilantro, scallions and pepper mixed with the yellow, red and orange peppers...we followed those "eating the rainbow" guidelines pretty well with this meal!
