20 minutes tops...

Wednesday Recap:

8:30am:  Coffee with Creamer


10:30-11:45am:  Power Yoga class = Happiness!J

12:30pm:  Lunch- Turkey tender with Laughing cow
So, back story to this one:  We somehow managed to have THREE Thanksgiving 'dinners' this past year, so I think I had this 'leftover' turkey + Laughing cow combo for lunch at least 2 weeks last November.  Not only do I NEVER get sick of leftover THANKSGIVING turkey, but I noticed the scale plunging at the same time...wohoooo!
And since Thanksgiving is 8 months away (sighhhhh..), I had to do the next best thing.
2 flattened (and very lean!  They were already trimmed) turkey tenders, coated with rosemary & a drizzle of olive oil and tossed on the grill for a few minutes...
...and if you don't have a grill at your desk, you can always make the turkey in the morning & reheat it at work.  I did this about 6 lifetimes ago...(otherwise known as 3 years ago & pre-KatieJ)

Served and slathered with 2 laughing cow wedges & this was the perfect protein post-workout lunch AND kept me full for awhile.  (now let's hope the luck of the scale follows suitJ)

3:30pm:  Snack- Nacho Kale Chips
So I was excited when I found these babies at Trader Joe's since you know my love for Kale Chips (and don't even get me STARTED on my month-long craving of Doritos when I was pregnant...)

They're really good & give a great CRUNCH to the afternoon...

...but snackers be warned a bit:  I was surprised to find that 1/2 a bag was 150 calories & 9 GRAMS OF FAT.  I mean, for KALE CHIPS?  Seemed like a lot to me.  Cashews is listed in the ingredients, so maybe that's where the excessive fat comes from??  Treat these like any other snack:  PORTIONED!


6:00pm:  Dinner- "Red Pepper" Chicken Parm over arugula

Ready for your easiest and most delicious dinner of the week??  READY...SET...GO!

1.- Saute up a diced onion & red pepper...

2.- Meanwhile, grill up butterflied chicken breast coated with olive oil, salt & garlic powder...

3.- Add the chicken to the pan and cover them with the onions & peppers and some mozzarella & tent it with aluminum foil on low heat to melt the cheese...

Like so...

4.- While the mozz is melting, mix up a quick arugula salad with olive oil, juice from half a lemon, sprinkle of grated cheese & 2 teaspoons of drained capers...


5.- Finally, plate up some salad...

...and toss on the chicken breast!

It honestly took me longer to type up this post then it did to make this dinner...it took 20 minutes, TOPS!  And it is soooooo good!  Gooey & cheesy while still being VERY light & refreshing.  You can NOT go wrong with this dish!
MAKE. THIS. NOW!

And since I didn't go to the grocery story AT ALL this week (2 weeks worth of groceries for $60 is always a win!), I might hop on over to Whole Foods today to pick up a few 'treats' that I've been wanting to try for awhile.  Anddd knowing Whole Foods, that should fill out the rest of my 2 week grocery budget in a split secondJ  Siggghhhh....
