Angel wings & fairy dust...

Tuesday Recap:

6:45-7:15am:  Dance, weights set x 2, 1 minute plank
Like I said yesterday, the sunny day made for an easy workout yesterday morningJ  The first thing I do every day now is pull up the blinds & let all the light in.  The house looks too closed up if they're all closed offJ  
8:00am:  Hot Lemon Water

9:00am:  Coffee with Creamer

10:30am:  Breakfast- 1/4 cup Chocolate Cashew Trail Mix
Protein + Chocolate for breakfast?  Ummmm...OK!

12:30pm:  Lunch- ""Spinach Pizza"
So yep, this one had to happen againJ  The only change I made today was adding some white beans into the mix for added satiety... 

...and it worked.  I was full after a little more than half way through my cheesy, gooey 'pizza' plate... 

...so I shared part of it with Katie for her lunch (only fair since I stole the white beans from her 'lunch stash' anyways J

...and the rest I saved for a snack around 2:30.  Talk about a gift that kept on givingJ hehehehhehehe 

4:00pm:  Snack- Apple (again, no pic...it's the avocado quesadilla of the weekJ)

So despite the sunny weather, we've had quite a cold-snap here in Jersey the last few days.  It looks like spring, but you better grab your hat & gloves before headin out!  Perfect weather for another EASY soup!

The toughest part of this soup was trying not to rip the roasting garlic out of the oven and inhaling it.  Phew...what 1 hour in the oven can do!  Roasted garlic is sweet like candy and is made of angels wings & fairy dustJ  In short:  It's REALLLLLLLLLLLLLLLLY good!

I mixed the garlic in with a box of chicken broth, sauteed carrots & diced onion, rosemary, 1 can of drained & rinsed chickpeas & salt and let it simmer for 20 minutes.  

After that, I hit it quickly with my immersion blender to break up the carrots, onions & chickpeas to thicken up the broth...

...and then added ONE more can of chickpeas for a little texture. 
Letting the soup simmer REALLY concentrated the flavor & it packed a ROASTED GARLIC punch.  It was super delicious and very filing with all the chickpeas.  Light & healthy...and added bonus, I found the recipe on a BEAUTY website.  So there's that tooJ

8:00pm:  Dessert-
And while watching Gordon Ramsey curse out contestants on "Hell's Kitchen" last night, I sneaked into my (VERY SMALL!) Easter basket of my few favorites & savored my yearly quota of...
