Gushing commencing...

Monday Recap:

8:30am:  Coffee with creamer

9:30am:  Breakfast:  Almond Joy Oatmeal
I was sooooo excited to share this one with you guys!  I had whipped this up for breakfast on Saturday morning, and loved it so much it made a repeat appearance come the Monday sunJ
  • 1 cup Unsweetened vanilla almond milk
  • 1/4 cup oats
  • sprinkle chia seeds
  • 1 tablespoon coconut oil
  • 1 teaspoon almond extract
  • 1 tablespoon mini chocolate chips
  • and...
...possibly one of the GREATEST items from Trader Joe's of ALL-TIME!!!

If you loooooovvvvvvveeeeee coconut, as I do, just RUN and pick up a bag of these sweet (with a little kick of salt) strips.  They are just...THE. BEST.

A little sprinkle on your oats (or swap for regular shredded coconut) and you have all the deliciousness of an almond joy bar mixed with heart health Oats.

1:00pm:  Lunch- Donna's "Eggless" scrambleJ
So as much as I loveeeeeeeeee coconut, it is equated by my DISLIKE of EGGS.  So I came up with this 'eggless scramble' back in the fall when I was trying to have a NON-CARB breakfast...sans those gross eggsJ  First, into a pan heated with a SMALL drizzle of olive oil I added:

  • 1/2 sliced onion
  • 1 diced roasted red pepper
  • 5 slices turkey lunch meat


Once the onions were softened & the turkey crisped up, I added a BUNCH of spinach...

I let the spinach wilt for 2 minutes before added a tablespoon of capers (cause I LOVEEEE me some capers!) & a sprinkle of feta.... 

I let everything melt together for another minute & WALLAH!  A QUICK, DELICIOUS, cheesy, salty, filing & super healthy 'eggless' scramble! 
I mean, I SUPPOSE you could add eggs or egg whites to my scramble...but...just...WHY?J

Although I WILL admit, I was just wishing for something a LITTLE extra after I mopped up my plate. And these new Coconut Almond Fiber One bars were calling my name....

I had half of one of these chocolate-y coated bars with the plan of going back later that afternoon, but the double punch of the scramble + protein bar kept me full for so long!


4:30pm:  Snack- Honeydew 


5:30pm:  Dinner- Roasted Beet Salad 
Again, in the mix:
  • Roasted Beets  (drizzled with olive oil & baked for 45 minutes at 400.)
  • 1/4 diced avocado
  • 3 diced green onions
  • Handful toasted walnuts
  • lettuce

6:30-7:50pm:  Beginners Power Yoga class

Did anyone catch The Biggest Loser finale last night??  In an effort to prevent spoilers, I will just say my jaw hit the floor when I saw the eventual winner...and the at-home prize SECOND runner up looked INSANEEEE!!!  Always such an inspiring show to watch.  And I COULD NOTTT love Dolvette, Bob Harper or THE NICEST PERSON IN THE WORLD, aka- Jillian Michaels ANY MORE! They are AWESOME!
