Coconut crack attack...

Thursday Recap:


8:30am:  Coffee with creamer

9:30am:  Breakfast- Coconut Pineapple Smoothie
OK, so I made this smoothie nearly identical to the one on Wednesday, except for adding in crushed chia seeds.  I guess it was the seeds, but it gave SUCH a bad aftertaste.  I couldn't even finish more than half of it.  Just WHOLE chia seeds from here on out in smoothies.  Lesson learned!


11:00am:  Lunch- Tuna with pretzels & a pickle
Yes...that does indeed say 11AMJ  I was SO hungry after the smoothie fail!


And I guess because my breakfast was no bueno, it had me craving a REAL breakfast mid-afternoon...so I went with it.  Pancakes HIT. THE. SPOT!


5:00-6:00pm:  Body Jam Class  (LOVEEEEEE this class!  Endorphins x 100000!)

After the pancakes and the POWERFUL dance class, I wasn't really all that hungry last night, hence my measly portion of chili.  All I wanted to do was chug water, water & more water after all the workin in dance class!
But it really is SOOO good!  And I 'eased' up the process a bit by tossing:
  • 1 pound trimmed chicken
  • 1 can whole tomatoes
  • 2 cups chicken broth
  • 1 diced onion
  • chili powder & cumin to taste
Into a slow cooker & letting it cook on high for 4 hours.  Then we removed the chicken & shredded it.  Tossed the chicken back into the pot with a can of tomato paste & some drained and rinsed kidney & black beans.  Another hour & a half and dinner was SERVED!  And a great one at that!!

But I still had enough room to sample some of the dessert I had made!  I had been wishin for something EXTRA coconut-y this week (as you might have guessed from my Almond Joy Oatmeal & Coconut smoothies)  And I knew Katie's "Coconut CRACK BARS" were just the ticket! 
And the easiest dessert recipe of all time!  I just pulsed everything together in the food processor:
  • 1 cup shredded coconut
  • 1/2 cup water
  • 2 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • dash of salt
And poured it into a small pan (pan could have been smaller...these guys were a little on the thin side) and refrigerated for an hour.  So simple and soooooooooooooooo very good!  These things will cure any coconut craving COLD!  And I don't say that lightly as it takes a LOT to satisfy my 'coconut tooth'J
Alrighty, so I better get in the shower after my quick gym seesh this morning before Katie wakes up!  Scott & I are hittin the town tonight:  We're getting our taxes done!!!  Wohooooooooo...don't be jealousJ  But while we're already out, we figured we'd sneak out somewhere to grab something to eat. Still not sure where yet, but New Hope/Lambertville's Restaurant week is always appealing...
