An easy equation...

Tuesday Recap:

6:45-7:30am:  New York City Ballet Workout (all dance & stretches)
I can't even REMEMBER the LAST time I did this workout...but I think it was before Katie was even a thought.  I thought I had finally strengthened my arms to the point of them NOT getting tired holding them up during ALL of the tondues...but that has yet to happenJ  It's no joke!

8:30am:  Coffee with creamer

9:30am:  Breakfast- Almond Joy Oatmeal
This time I added a whipped banana to the mix.  It helps with the sweetness AND gives it a LOT more volume, while still keeping that yummy coconut/chocolate flavor.  So good!

12:00pm:  Lunch- Avocado & Colby Jack Quesadillas
And despite having this for lunch both Saturday AND Tuesday, I somehow failed to get a picture of it!  Some times the hunger, and the need to shove avocados in my face as quickly as possible, just takes overJ  

1:30pm:  Snack- 1/2 Fiber 1 Coconut Almond Bar

Anddddd here's where my day went off course a bit.  It started with a few pretzels, then a leftover edge of a brownie that I had in the freezer and then finished off with a glass of Halo Farms chocolate milk that Scott brought home yesterday afternoon.  That may not sound like a lot, but that SMALL GLASS of chocolate milk alone was 240 calories.  I just felt picky all afternoon.  You better BELIEVE I DOWNED a glass of hot lemon water first thing this morning to put a stop to my 'afternoon crave fest!'  

6:00pm:  Dinner- Pesto Pasta Bake
And since my day felt totally out of whack after my snack attack, I couldn't ignore the fact that I was just dying for the pasta dish I had planned for later in the week...even though I ate carbs EVERY. DAMN. MEAL yesterday!  Not the plan, but one that I could not ignore...
And thankfully, the pasta totally hit the spot!

A quick saute of fresh tomatoes (that I bought for $1 this week!), tossed with the cooked pasta...

...a stir of pesto, a sprinkle of low-fat mozzarella & a quick trip to the broiler to melt the cheese...

YUM!  And made from start to finish in about TEN minutes!
I asked Scott if he liked this dish & then quickly followed the question up with "well, it's kinda hard to be bad, huh?"  Pesto + Melty cheese + fresh tomatoes??  Yeah...that's an equation with an obvious result.J

So raise your hand if you can't believe it's the first day of spring...RAISE, RAISE over here!  Even if it doesn't FEEL like spring over here, I have a spring-y dinner planned for tonight that of course involves Lots of LEMONS!  Stay tuned...
