...Saturday, I was FINALLY feeling 98% better and ready to E.A.T! :) And thankfully, my "first meal post chicken soup" was a great one;) I met a friend (Hi, Di!) at one of my favorite places, "Tortilla Press" in Collingswood for lunch...butttt I was very excited when I realized their special BRUNCH menu was still offered until 2:30! So even though I DIE for their guacamole, nothing sounded better than this cinnamon cream cheese stuffed french toast!...
Just about the best French toast I've EVER had! Perfectly crisp & cinnamon-y (not soggy & eggy....bleh!), stuffed with the sweet cream cheese with the side of SWEET (NOT TART) berries....this was one of the best things I've had in awhile:) (Or maybe it was just better than Zicam and shredded wheat;) Love Tortilla Press! :)
And after lunch and a day of last minute "travel errands," Trader Joe's was my SAVIOR for dinner;) (However, apparently 6pm is NOT a time to shop there! One of the frozen food displays was more crowded than Guy Fieri at a Cheesesteak Battle! FOR REAL!) And after elbowing my way through a dizzying amount of people, I was sooo happy to see the crowds part and the sun shine on one of my "must get" items:
MMMMMMMM....this had a SUPER cracker thin & crisp crust (Federici's style) topped with some smooth gruyere, salty ham and sweet caramelized onions. Totally TOP NOTCH!
Andddd since the 'tarte' box felt as if it was about three ounces, I grabbed a second pizza just in case;) (Scott was thankful that I did;)
Grilled chicken with a little tangy BBQ sauce and sweet onions on a chewy crust, this totally rounded out our 'random pizza night' ;) And best of all, they both went from frozen to table in under 15 minutes....FANTASTIC after a day of errands;)
After that, we called it a night....except for finally getting around to watching "Paranormal Activity 2." Ummmm....are they kidding me with that movie??? We REALLY liked the first one, but this one was a JOKE. Terribly disappointing:( (Guess they all can't be "The Strangers." If you like scary movies: SEE. THAT. NOW! :)
Whhich brings us to Sunday morning, and since it was our 'last home cooked meal for a week,' we thought we'd go the 'extra healthy route' and make some steel cut oats....
Now I LOVEEED making the oats in the slow cooker, but it's also super easy to whip them up in the morning....you just need about a half hour. I brought 3 cups of water to a boil and added 3/4 cups of steel cut oats, lowered the heat, covered the pot and let it simmer for 25 minutes (stirring occasionally). When the oats were almost done, I added a little vanilla, an obscene amount of cinnamon & a little brown sugar. These were hearty, chewy, filing and just delicious:)
And after that, we headed over to my in-laws to celebrate both my Step Mother-in-law AND my birthday, which we share on Friday;) Now we're all packed up and ready to head to San Francisco bright and early!! I'll try to send some updates during the week and I will DEFINITELY have TONS to show you when we get back:) See you then! Hope you guys have a GREAT week!
