"Festive Salads"

Well....I didn't plan it that way, but CHRISTMAS ended up sneaking up in our salads last night:)  How bout that?? :)  Even Santa was impressed;)

In our Monday "Holiday" Mix:

• Ground Turkey, mixed with Taco seasoning & cumin
• Corn
• Black Beans
• Shredded Cheese
• Carrots
• RED Roasted Peppers
• GREEN diced avocado:)

See, you can always have the holiday spirit...even in your 'Monday Salads'...

OK...but let's get to the real issue of yesterday:  IT. WAS. FREEEEZING in NJ!!!!!  And OF COURSE the 3 degree wind picked up JUST as I was getting out of the car to go to the gym!  Irony, right???  Butttt instead of letting it deter me, I just let the wind whip me right into the front doors and got warmed up with an hour of Pilates.  Can't start slackin now or it's gonna be a loooooong winter:)  But not gonna lie, it was a CHALLENGE to NOT go directly to my warm couch for the evening:)

Not gonna have that problem tonight though:)  As I will be heading directly home for a warm AND YET ANOTHER surprisingly "festive" meal.  Stay tuned and have a good Tuesday! :)
