Colby Jack Chicken...

OK folks, this one was seriously simple & seriously delicious!  We based if off a recipe from Curtis Stone's book and made Colby Jack Coated Chicken over honey mustard spinach salad...
Yum, right???? 

Scott dredged the chicken tenders in flour, egg and then in a mixture of breadcrumbs & Colby jack cheese.  He seared them up to brown a bit on the outside before finishing them off to cook in the oven for about 20 minutes.  We were worried it was going to make a 'melty mess.' but the cheese stayed put, the chicken stayed moist and we were met with a crispy, cheesy coating!
The first bit I thought tasted like Cheese-Itz....to which Scott said: "Well, there are worse things in the world" :)  hahahhahaha...

We served them over the spinach that was mixed with honey, white vinegar, olive oil, Dijon mustard and salt and pepper.  Perfectly sweet & tangy to go along with the cheesy chicken:)
LOOVVED this dish....it was super flavorful, but still REALLLLY light!  Gotta love that! :)

And speaking of light...well, LightS....we finally got our Christmas Tree all lit up and decorated!  That angel just BARELY made it...she is SKIMMING that ceiling;) hahahahhaahhahahahaa.....

And in other (non-"light") Christmas news, I thought I'd share my other TJ's find from last week:

OK, these babies are STRONGGGGGGGG in the mint deparment...but ya still can't beat a Christmas "flavored" Oreo Joe-Joe!  :) 
I just about think "3pm Co-worker Cookie Hour" may just extend through the holiday season:)  Then I get a sample, the rest go to my work peeps and everyone is happy:)  Gotta spread around that  holiday cheer;) hahahahahahaha....

Well, we have another Curtis Stone dinner on tap for tonight, WHICH Scott informed me around...umm....7:45 last night that he was already excited for it;)  Should be a good one:)  Stay Tuned and have a good Thursday!
