Always a surprise...

Wednesday Recap

8:00am:  Hot Lemon Water

9:15:  Breakfast-  Yep, another Multigrain waffle with butter & flax  (I added Katie to the picture to at least shake it up a bitJ)

10:30:  Coffee with creamer

Leftovers are just so good when all you want is something quick and warrrrmmmmmmm...which I've wanted nearly EVERY DAY this winter!

3:30pm:  Snack- Strawberries & Cheddar Pop Chips 
Sweet AND salty were both screaming out for me by the time I figured out what I wanted for snack.  Those Pop Chips just hit the salty spot...and I don't even think that cup held the 22 you are allowed for a 120 calorie serving.  SO GOOD!

6:00pm:  Dinner- "Blackened" Chicken over lime quinoa & roasted cauliflower
Oh...and did I mention it's topped with avocado cream?  Yeah...that happened FO SHO!

I butterflied the chicken (well, SCOTT butterflied the chickenJ) and seasoned it with:
  • Montreal steak seasoning
  • Cumin
  • Garlic powder
  • Onion powder
  • salt
  • olive oil
I tossed that on the grill to cook and get all of those pretty grill marksJ

Meanwhile, mixing 1 avocado with 2 tablespoons of nonfat yogurt to make the creamy sauce to coooooooool down all of the seasonings...

While the chicken was cooking, I tossed a cup of quinoa into 2 cups of chicken broth & let simmer until the water evaporated.
I had tried this 'noa that Scott had gotten me for Christmas (yes, you just read that correctly) and I thought it was really mild & tasty.  The absolute KEY WITH QUINOA is to RINSE, RINSE, RINSE before you cook it.  The outer coating of the seed is very bitter and caused me to dislike quinoa for a LONG time before learning this little trick.  Take my advice and RINSE!

Once the quinoa was cooked, I tossed in the flavors for the evening:  Lime zest, juice of 1 lime and a handful of diced cilantro...
Now if you like MILD flavors...DO NOT use all of the zest & juice of 1 lime.  It PACKED A PUNCH!  Mixed with the chicken, it was phenomenal...but alone??  Holy heaven, you won't have any sinus problems after that one!

But the tangy quinoa + spiced chicken + coooool avocado cream = Fantastic together!  The flavors & textures really complimented one another.  We couldn't get enough of this dish.

And on the side:  our beloved roasted cauliflower.  Just dice, toss with olive oil, salt & garlic powder and bake at 395 for 30-40 minutes until toasty.  Scott is NOT a cauliflower fan, but he GOBBLES this down.  It's a HIT! 

And in Katie's Corner, I had scooped her up a bit of the quiona & cooled cauliflower to try (this bowl was bigger than it appears in this pic) 

After I tasted how tangy the quinoa was, I thought there was NO WAY she was actually going to eat it.  And, just like ALL things with babies & kids, she shocked me by DEVOURING it!  She had quinoa all over her because I couldn't shovel it in fast enoughJ 

It wasn't a TOTAL happy plate, but I think she did pretty darn good considering there was CILANTRO involved.  I don't think I even liked cilantro until about 2 years agoJ

8:00pm:  Dessert- MORE vanilla ice cream with melted cookie butter 

9:00pm:  25 minute Body Slimming Yoga
I've been having trouble getting up early this week for workouts, so I just have to sneak em in at night when I can. I MUCH prefer working out first thing in the morning because you do it before you have time to THINK about it, aka-psych yourself out.  I'm MUCH more likely to skip a workout if I spend alllllllllll day saying "after I make dinner, play with the baby, solve world peace....THEN I'll work out!"  It makes it WAY too easy for me to make excuses.  But if first thing in the morning doesn't work out, I just have to crank up that motivation and get movin whenever I can.

ANYWAY...from working out talk to THIS:  I just may have a special dessert involving cookie butter UP MY SLEEVE for tonight.  Between that and planning my annual Valentines Day dinner, I have lots of visions of sugar swirling in my head!  Stay tuned, I think you'll like this one!

Deja vu...

Tuesday Recap
(Which is...ahem, pretty similar to MondayJ)

8:00am:  Hot Lemon Water

9:15am:  Breakfast-Multigrain waffle with butter & flax

10:15am: Coffee with creamer

1:00pm:  Lunch-Cucumber with Greek olive hummus 
OK, ok...so I used a few of those blessed muligrain tortilla chips to mop up the rest of the hummus.  I just LOVE those damn things! 

3:00pm:  Snack #1:  Strawberries 
These are SOOOOO GOOD!  And I got them for 2 pints for $2.29 last week.  I did NOT expect them to be so sweet in February.  Tis the month of RED, I suppose.

4:30pm:  Snack #2:  5 dark chocolate almonds

6:00pm: Dinner- ...
It was time to bust out my old school card for one of our reliable favorites:  Spaghetti Squash Casserole.

And since I had to turn on the oven to roast the spaghetti squash, I thought I'd throw in some broccoli & cherry tomatoes (ALSO 2 crates for $2.25!) for extra FLA-VA!
The 'prep' time to roast the squash (and broccoli...and tomatoes...ect) takes awhile, but once everything is done, you just toss everything into a bowl, mix, pour into the casserole dish...

40 MORE minutes in the oven and BOOM! DONE!
It's a great dish to make in advance and then pop in the oven for a quick weeknight dinner.  Not to mention, EXTREMELY customize-able!  You can add any veggies you have on hand for a super tasty and SUPER nutritious dinner!

And this is a vegetarian dish that will certainly stick to your ribs....soooooo cheesy & yummy!

8:00pm:  Dessert- Light vanilla ice cream with MELTED COOKIE BUTTER

No workouts today.  I just wasn't in the mood, and that's OK ever so often.  (Just not TOO oftenJ)  Hope you guys have a great day...as I can HONESTLY say at the moment I have NO CLUE if it's Tuesday or Wednesday....I guess I'm mentally on Friday along with all of youJ

Cheese, wings & DETOX...

Hey everyone!  I'm here!  Back from my food comaJ  Hope you guys had a great weekend filled with fun & food, like we did around these parts.  And when I say food, I mean FOOD x's 2...as I inadvertently planned another "themed night," the Friday BEFORE Chickenwings&nachos Sunday.  

I mean, the SuperbowlJ

You see, after our annual "Fall Wine & Cheese" party last year, it was decided that once a year is just SO not enough.  Wine & Cheese are for all year long, amIright??  So to go along with the frigid temps on Friday, we also convened for the 1st ever WINTER Wine & Cheese Part-a!J

1st course:  a bowl of AWESOME Italian egg drop soup & thebestgarlicbreadEVER that a friend made.
Now I do not DO eggs...and even I thought this was DELISH!  Perfect way to warm up the ole bonesJ

We also had a spread of hot feta & artichoke dip, a little prosciutto wrapped melon to cleanse the palate (we also 'cleansed the palate' with ahem...coconut bonbons...ahemJ) & a luscious (and sadly, unphotographed) raspberry baked brie in puff pastry...yummmmmmm....

And, I have to say, I think my favorite of the night that I just CAN. NOT stop thinking about, was the goat cheese & olive tapanade crostini...mmmmmmmmmmmm!!!!! 

And for dessert:  MORE Coconut Hot Chocolate...with messy toasted coconut rimmed mugsJ

And these adorable & delicious red velvet Valentines bars!  How cute are these??  Just looking at them makes me happyJ   

And in the SUNDAY roundup...we had some homemade Stromboli, crab dip & beer bread (which, I think was my fav!), sweet BBQ wings and a nacho bar...

We don't mess.

And for SUPERBOWL dessert:  a pretzel crusted Peanut butter pie topped with salted caramel (I LOVEEEEEEEEEEEEEE salt and even I thought this was SUPER salty...and rich.  Don't worry-I made it, so I can say thatJ)

And let's not forget cannoli dip & chips.  Ummmm...yes, please!  Halftime was ALL about Beyonce & these chips for meJ 

The rest of the weekend, I TRIED to fill with nutritious stuff to keep SOMEWHAT of a semblance of balanceThere was power yoga, pilates and...

Friday Breakfast:  Oatmeal with Peanut Butter... (that bowl looks HUGE...but it's actually 1/4 cup oats WHIPPED with a banana)

Friday lunch:  Half a turkey BLT & a cup of veggie pesto soup from Panera...
 
(by the way....that soup was REALLLLLLLLY good!  I got it SOLELY for the 'low-cal' option, but it was really tasty.  I'd so get that again!)

Saturday Breakfast: Pineapple Green Monster...which, you know if you read my Facebook page, I accidentally made with a 'spring mix'...which included Swiss chard & ARUGULA!!!  

Yes...you could taste itJ  

But yes, it was still tasty enough to finishJ

Saturday Dinner:  Stir fry made of 3% pork & 97% veggiesJ   B-A-L-A-N-C-E!

Anddddd back to yesterday's attempt to DETOX  nearly all of the aboveJ

6:30-7:45pm:  Beginners Power Yoga

Yesterday was TOUGH, I have to say.  I spent a LOT of the day fighting off thinking about those salty leftover multigrain tortilla chips that are currently residing in the BACK of my "junk drawer" (which is VERYYYYYYYYYYY small and as out of sight as possible!!!)  I literally was going in the kitchen to get a small bowl when I FORCED myself to get those strawberries!  I ate em, waited a beat & the craving passed.  Even in yoga, I just felt OFF.  COULD NOT BALANCE to save my life last night.  Oh well, it happens.  And I'm happy (AND SHOCKED!) to report that all the extra 'pounds' (yes, that is pluralJ) I had put on this weekend were gone by this morning.  I REALLY did try to eat consciously this weekend & enjoy what I had and stop when I was full (even if I MAYBE ate a few more olive tapanade crostini then necessaryJ), it was DEFINITELY better than other 'events' where I would be STUFFED TO THE GILLS at every turn.  And for that-I'll take it as a win!

Make a wish...

Oh hey...happy February, guys.  Can anyone else believe that January flew by already??  Or am I the only one?I'm probably in the minority of folks who loves winter...but I think it's COZY SEASON!  Oh yeah...and casserole season.  Did I mention casseroles??

ANYWAY...

Thursday Recap

7-7:30am:  Dance/1 set arms/ 1 minute plank mix

8:00am:  Hot lemon water

9:15am:  Breakfast-Multigrain waffle with butter & ground flax seed
10:30am:  Coffee with creamer

1:00pm:  Lunch-Arugula salad with salmon, roasted beets & balsamic vinaigrette
Sorry...no pics!  I had lunch with some friends/ol' co-workers AND Katie which made me loose track of my camera phone while lugging in her diaper bag, bottle, puffs, falling shoes, ectJ  I was going to take pictures of the leftovers...until Katie grabbed the container while I was driving home and the remainders ended up all over my back seat.  AWESOMEJ


Caramelized onions, thyme, shredded gouda & a little broth (beef, chicken or veggie) all mixed with baked potato fillings and broiled until melty & delicious...

Easy & delicious!

And we got to make a wish last night because it was the first time we ever tried Okra!  (my Grandmother said you ALWAYS make a wish when you try something new or go somewhere for the first time...and why not??!J)

Cleaned, trimmed & diced in half, I soaked the okra in a buttermilk & egg bath and then dredged them in a cornmeal mix... 

I say "mix" because I made a coating out of corn flour, grits & bread crumbs, thinking I was out of cornmeal...

...only to find a container once I was putting everything else awayJ  Oh well, next timeJ

Arranged on a single layer on a greased cookie sheet... 

...and spritzed with some olive oil spray before baking in the oven for about 40 minutes at 450 degrees. 

Verdict?  The first few bites of okra I thought were VERY strong.  I wasn't sure if I liked them very much, but I think the more they cooled, the more the bites seemed to mellow out & blend well with the coating.  I even dunked a few in ketchupJ  Wild & crazy, I know.  
Not sure if I'd be ready to try steamed/plain okra anytime soon...but who knows?  Never thought I'd offer Scott a choice of roasted broccoli or kale chips as a side dish & his response would be "oooooooooo!", as if I just offered him to pick between cake or ice creamJ Seriously...

8:00pm:  Dessert-4 TJ's Chocolate covered peanut butter pretzels  (thankfully, the LAST 4...these babies are DANGEROUS to have around!!!)
OK...I definitely don't think I ate enough today.  There were wayyyy too many times today that I let myself get REALLLLY hungry.  But the day just got away from me and I didn't realize I was hungry until I was FAMISHED.  Not a great plan, but it happens.  Hopefully it'll help in holding off the pounds after this weekend coming up...which includes not one, but TWO 'eating event!'  I have a 'plan' for them both, we'll just see how well I stick to them once I'm surrounded by cheese.
