Make a wish...

Oh hey...happy February, guys.  Can anyone else believe that January flew by already??  Or am I the only one?I'm probably in the minority of folks who loves winter...but I think it's COZY SEASON!  Oh yeah...and casserole season.  Did I mention casseroles??

ANYWAY...

Thursday Recap

7-7:30am:  Dance/1 set arms/ 1 minute plank mix

8:00am:  Hot lemon water

9:15am:  Breakfast-Multigrain waffle with butter & ground flax seed
10:30am:  Coffee with creamer

1:00pm:  Lunch-Arugula salad with salmon, roasted beets & balsamic vinaigrette
Sorry...no pics!  I had lunch with some friends/ol' co-workers AND Katie which made me loose track of my camera phone while lugging in her diaper bag, bottle, puffs, falling shoes, ectJ  I was going to take pictures of the leftovers...until Katie grabbed the container while I was driving home and the remainders ended up all over my back seat.  AWESOMEJ


Caramelized onions, thyme, shredded gouda & a little broth (beef, chicken or veggie) all mixed with baked potato fillings and broiled until melty & delicious...

Easy & delicious!

And we got to make a wish last night because it was the first time we ever tried Okra!  (my Grandmother said you ALWAYS make a wish when you try something new or go somewhere for the first time...and why not??!J)

Cleaned, trimmed & diced in half, I soaked the okra in a buttermilk & egg bath and then dredged them in a cornmeal mix... 

I say "mix" because I made a coating out of corn flour, grits & bread crumbs, thinking I was out of cornmeal...

...only to find a container once I was putting everything else awayJ  Oh well, next timeJ

Arranged on a single layer on a greased cookie sheet... 

...and spritzed with some olive oil spray before baking in the oven for about 40 minutes at 450 degrees. 

Verdict?  The first few bites of okra I thought were VERY strong.  I wasn't sure if I liked them very much, but I think the more they cooled, the more the bites seemed to mellow out & blend well with the coating.  I even dunked a few in ketchupJ  Wild & crazy, I know.  
Not sure if I'd be ready to try steamed/plain okra anytime soon...but who knows?  Never thought I'd offer Scott a choice of roasted broccoli or kale chips as a side dish & his response would be "oooooooooo!", as if I just offered him to pick between cake or ice creamJ Seriously...

8:00pm:  Dessert-4 TJ's Chocolate covered peanut butter pretzels  (thankfully, the LAST 4...these babies are DANGEROUS to have around!!!)
OK...I definitely don't think I ate enough today.  There were wayyyy too many times today that I let myself get REALLLLY hungry.  But the day just got away from me and I didn't realize I was hungry until I was FAMISHED.  Not a great plan, but it happens.  Hopefully it'll help in holding off the pounds after this weekend coming up...which includes not one, but TWO 'eating event!'  I have a 'plan' for them both, we'll just see how well I stick to them once I'm surrounded by cheese.
