Hey everyone! I'm here! Back from my food comaJ Hope you guys had a great weekend filled with fun & food, like we did around these parts. And when I say food, I mean FOOD x's 2...as I inadvertently planned another "themed night," the Friday BEFORE Chickenwings&nachos Sunday.
I mean, the SuperbowlJ
You see, after our annual "Fall Wine & Cheese" party last year, it was decided that once a year is just SO not enough. Wine & Cheese are for all year long, amIright?? So to go along with the frigid temps on Friday, we also convened for the 1st ever WINTER Wine & Cheese Part-a!J
1st course: a bowl of AWESOME Italian egg drop soup & thebestgarlicbreadEVER that a friend made.
Now I do not DO eggs...and even I thought this was DELISH! Perfect way to warm up the ole bonesJ
We also had a spread of hot feta & artichoke dip, a little prosciutto wrapped melon to cleanse the palate (we also 'cleansed the palate' with ahem...coconut bonbons...ahemJ) & a luscious (and sadly, unphotographed) raspberry baked brie in puff pastry...yummmmmmm....
And, I have to say, I think my favorite of the night that I just CAN. NOT stop thinking about, was the goat cheese & olive tapanade crostini...mmmmmmmmmmmm!!!!!
And for dessert: MORE Coconut Hot Chocolate...with messy toasted coconut rimmed mugsJ
And these adorable & delicious red velvet Valentines bars! How cute are these?? Just looking at them makes me happyJ
And in the SUNDAY roundup...we had some homemade Stromboli, crab dip & beer bread (which, I think was my fav!), sweet BBQ wings and a nacho bar...
We don't mess.
And for SUPERBOWL dessert: a pretzel crusted Peanut butter pie topped with salted caramel (I LOVEEEEEEEEEEEEEE salt and even I thought this was SUPER salty...and rich. Don't worry-I made it, so I can say thatJ)
And let's not forget cannoli dip & chips. Ummmm...yes, please! Halftime was ALL about Beyonce & these chips for meJ
The rest of the weekend, I TRIED to fill with nutritious stuff to keep SOMEWHAT of a semblance of balanceJ There was power yoga, pilates and...
Friday Breakfast: Oatmeal with Peanut Butter... (that bowl looks HUGE...but it's actually 1/4 cup oats WHIPPED with a banana)
Friday lunch: Half a turkey BLT & a cup of veggie pesto soup from Panera...
(by the way....that soup was REALLLLLLLLY good! I got it SOLELY for the 'low-cal' option, but it was really tasty. I'd so get that again!)
Saturday Breakfast: Pineapple Green Monster...which, you know if you read my Facebook page, I accidentally made with a 'spring mix'...which included Swiss chard & ARUGULA!!!
Yes...you could taste itJ
But yes, it was still tasty enough to finishJ
Anddddd back to yesterday's attempt to DETOX nearly all of the aboveJ
8:00am: Hot Lemon Water
9:15am: Breakfast- Multigrain Waffle with butter & flax
10:15am: Coffee with creamer
12:00pm: Lunch-Greek olive hummus with cucumber slices
1:30pm: Coffee with creamer (oh yes...there was more today! Thanks a lot, blackout!)
2:00pm: Snack #1-Strawberries
4:00pm: Snack #2- 5 dark chocolate almonds
5:30pm: Dinner- Buffalo Chicken Salad
- Panko coated buffalo chicken tenders
- Leftover blue cheese cole slaw
- Red Leaf lettuce
- a couple croutons
- sprinkle of Gorgonzola (for good measure)
6:30-7:45pm: Beginners Power Yoga
Yesterday was TOUGH, I have to say. I spent a LOT of the day fighting off thinking about those salty leftover multigrain tortilla chips that are currently residing in the BACK of my "junk drawer" (which is VERYYYYYYYYYYY small and as out of sight as possible!!!) I literally was going in the kitchen to get a small bowl when I FORCED myself to get those strawberries! I ate em, waited a beat & the craving passed. Even in yoga, I just felt OFF. COULD NOT BALANCE to save my life last night. Oh well, it happens. And I'm happy (AND SHOCKED!) to report that all the extra 'pounds' (yes, that is pluralJ) I had put on this weekend were gone by this morning. I REALLY did try to eat consciously this weekend & enjoy what I had and stop when I was full (even if I MAYBE ate a few more olive tapanade crostini then necessaryJ), it was DEFINITELY better than other 'events' where I would be STUFFED TO THE GILLS at every turn. And for that-I'll take it as a win!
