Figuring it all out...

Siggghhhhhh...so, the honest reason for the day-break in blogging was that Tuesday was a DISASTER!  Grrrrrrr.  I ate HORRIBLY and paid the cost by feeling like a lazy MUSH for the rest of the day.  Not sure if it was spurred on by missing my "morning snack" Tuesday morning, sending me into a spiral of being STARVING by lunchtime and nothing being able to satisfy me...even after HOURS and MANY (MANY!!!!) attempts at various 'sweets & salts.'  OR that my Monday weigh-in got 'in my head' since, after a good week, 1 mindful splurge AND doing REALLY well at the birthday party on Sunday night, I still managed to weigh the EXACT same amount as I did after eating CHICKEN AND WAFFLES last week.  CHICKEN AND WAFFLES!  It doesn't even make SENSE and I was livid...and as much as I tried to shake it off, I think those 2 factors just kinda imploded on each other, setting myself up for a bad day.  I'm still trying to figure out my triggers even after ALL. THESE. YEARS!

BUT I tried to tell myself 'just like one day of GOOD eating won't make you slim, one BAD day of eating won't make you heavy' (although it'll make you feel TERRIBLE!).  So, facing a new day ahead, I knew I just needed to BREATHE, go easy on myself and make better choices without beating myself up.  

Oh yeah...and chug water like it was my JOB!  That's the quickest way to feel better after a rough day.

And with all that said....

Wednesday Recap:

9:00am:  Breakfast- Flax protein pancake with Almond butter & a little syrup
I'm able to skip my morning snack with this one since it's so filling...so I knew it was a 'safe choice' for the dayJ  (yes, this is the stuff I have to think aboutJ)


Morning Workout:  Power Yoga
The ULTIMATE reminder to go easy on yourself and, in yogi-speak:  Practice 'ahimsa' (non-violence)...even while you're trying to do some crazy moves & arm balances.


1:00pm:  Lunch- Cinnamon date smoothie in a bowl with coconut chips & coconut butter
  • 4 dates (24 calories each)
  • 1 cup unsweetened almond milk
  • CINNAMON...and lots of it!
  • 1/4 cup rolled oats
  • 1 scoop vanilla protein powder
I am LOVING coconut butter crumbled on these smoothie bowls.  They are actually crunchy once they hit the cold liquid and make for little (healthy) bites of coconut JOYJ  And this cinnamon date variety was the ultimate in vanilla-creamy-dreamy-nessJ  It smelled faintly like sweet rice pudding.  Swooooon....



OK...this was seriously the most random, weird snack I'll definitely have all week.  I had pinned this on my Pinterest board with some fierce gusto, but it took me a looooooong time to actually be brave enough to try it outJ  I loved all the INDIVIDUAL ingredients (OK...quinoa is still in the 'learning to LOVE' category)...but would it work???  COULD it work???

Answer = YES!  All of the unique textures & flavors really complimented one another.  I especially loved the little drizzle of sweetness from the honey... 
Quick recipe for ONE:
  • 1/4 cup cooked quinoa (reheated in the microwave for 1 minute)
  • 1/4 sliced avocado
  • 1 tablespoon almonds (I used a 'salt & pepper' variety here)
  • 1 tablespoon honey
Try this one out if you want something QUICK, interesting and FILLING.  This one hit the spot on LOTS O' LEVELS!


These were so super easy, that the hardest part was letting the shredded zucchini sit in the fridge for an hour to drainJ

Give all the ingredients a mix, scoop out 1/4 cup mixture to place on the skillet and flatten into pancakes... 

Let them cook a few minutes before flipping and letting them get golden brown on each side... 

Served with a quick and refreshing tzatziki sauce and these made for a quick & easy 'light bite' that uses all the great summer goodies... including FRESH DILL, which I included in both the fritters and the tzatziki sauce.  SUCH a great, tangy, fresh flavor!

Evening Workout:  Body Jam
Another week where it was SOMUCHFUN that I didn't really feel my feetJ  We were all just crusssssiiiinnnn across the floorJ

8:00pm:  Dessert- Ritz Smores
This time I made one with SALTED CARAMEL CHIPS...which was, ummmm, one of the best ideas in the history of ideasJ  (ps- I got the chips at AC Moore...which couldn't be more randomJ)

Alright...well, that was my day of 'recovery,' and even though it's a gloomy one around these parts, I made sure I got up early and got in my morning workout since my workouts were NON-EXISTENT on Tuesday.  It feels 12470394 zillion times better to eat well and get a good sweat.  STILL not sure why I think 'the other side' is even REMOTELY entertaining for more then the 12 seconds it takes to shove a cupcake in your face.  Maybe ONE DAY I'll figure it all outJ  Until then...hope you're enjoy the journey along with meJ  I struggle & thrive just like you guys!
