3 minute "cooking time"...

Hey, all!  Sorry for the delay!  I feel like I haven't taken a picture of a days worth of meals in SO long.  How VERY Un-ME!  But I finally got one for you...topped off with a pretty delicious/NO COOK dinner for these HOT DAYS of summer.  Oh yeah...which have officially arrived in Jersey the last few days.  Eeeeee...

Tuesday Recap:

9:30am:  Breakfast-  Fage & Honey with a teaspoon of roasted flax seed


11:00:  Morning Snack- 3 mini wheat pita with 1 tablespoon of hummus (old picture, but you get the driftJ)


1:00pm:  Lunch- "Happy Salad"


3:30pm:  Snack- Almond Joy Energy Bites 
Which I made with Katie...

....who was so excited about it that THIS happened: 

Hahahahahahah...good thing they only fell into my already coconut-covered counter.  This is a photographic description of "Cooking with a 2 year old"J 


6:00pm:  Dinner- Watermelon Caprese Salad 
How's that for "light & summer-y"??  No heating up the kitchen required!  Ya just need:
  • Sliced watermelon
  • Sliced fresh mozzarella
  • Torn basil
  • Drizzle of honey
  • Sprinkle of sea salt
Serve with a side salad or grilled chicken if you need more "OOMPH," but Scott & I had this on its own and it was filling enough on the HOT day that was yesterday (and today!)  That is one refreshing bite...

And in another case for NOT cooking, I actually grilled a few slices of watermelon first and it was just...EW.  Did not like AT ALL!  The flavors of the salt, honey & cheese tasted sooooooooooo much better on the cold, crisp, sweet watermelon.  Plus non-grilling took the cooking time from 10 minutes to 3J  Can't argue with thatJ


Workout:  1 hour Vinyasa Yoga class 

Dessert-  Ritz Smores

Well, the first new blog in days and I already have to run and get ready for morning yoga today.  And I can already tell this is going to be an UNGODLY HOT ONE!  Non-Bikram bikramJ
