Worst cook of...

Wednesday Recap:

9:00am:  Breakfast- 1/2 French Toast bagel with butter
Confession TIME!:  I guess given that I obviously have a food blog, it would be safe to say I think I can cook pretty decently.  Certainly NOT the best, but not the worst.  But guess what I can OFFICIALLY say I'm the WORST at making??

Are you ready?????


PANCAKES
No.  Seriously.  Sure, I can mix up your standard box mix with the best of them and have had SOME success with the protein pancake variety, but 9 out of 10 times, it's a miss more than a hit.  REALLY???  REALLLLY???

I had tried to whip us these coconut flour/flax cakes, only to barely be able to flip them AND finding them all gross & gooey in the centers.      ...oh yeah, I probably should mention that we were out of egg and I tried to do a chia seed/water sub to, obviously, no success...
BOO!
So make this the SECOND Wednesday in a row where pancakes went in the trash and I was TOOPISSEDOFF to polish off any sort of 'sensible breakfast.' 

Bagels fix anything.

Oh yeah, and so does...
10:30-11:45- Power Yoga
Even a COMPLETELY soaking, drenching rain coupled with a parking space a gazillion spots away from the entrance couldn't keep me from yoooooooooouuuuuuu, yogaJ

1:00pm:  Lunch- "Happy salad" 


Just had to happen yesterday.  


5:00pm:  Dinner- Lasagna Pizza bread with salad
So given that the DRENCHING RAIN thwarted my plans to stop at the grocery store yesterday, dinner had to be WARM, COZY...and most importantly: be made with everything we already had on hand.  And since this leftover pizza sauce was just BEGGING me to be used up..
...I thought this "pizza bread" would hit the spot perfectly.

I don't normally serve 'bread-heavy dishes' back to back on the weekdays (and ESPECIALLY not after having a bagel for breakfast!), but I took a few steps to lighten them up a bit.  It was as easy as browning up some ground turkey with salt & pepper...

...mixing up some part-skim ricotta with parsley, salt, pepper and grated Parmesan cheese...

...and, for my slice, scooping out some of the 'inner-eds' of the bread to save some calories. (I attacked it even more after this picture!)  
It's such a simple step that will save you calories and you will NEVER miss the extra bread.  (I should have also done this with my breakfast bagel but was too annoyed to remember it at the time...hahahahahahaJ)

Then you just pile on the turkey, sauce, ricotta and sprinkle it with a little mozzarella & parm before popping it in a 350 degree oven until the cheese was melty & bubbly...
The only thing missing was maybe a little crushed fennel seed to give the 'taste' of sausage, but otherwise...well, OF COURSE they were good:  Bread+Meat+Cheese+Pizza Sauce??  Always a winning comboJ

5:30-6:30pm:  Body Jam
It was a 'new release' last night, which meant I spent most of the time trying to figure out what I was doingJ  Hopefully next week it'll be a little more "second nature"J

8:00pm:  Dessert-  Yep
I know you'll all be crying when I tell you that last night's dessert was the LAST of our recipe of 8 coconut cupcakesJ  ...that is until I make them again ASAPJ

AND SURVIVOR!!!!!!  
It's really very year-2000 of me to say that I am SO super invested in these 2 players this season that I actually get nervous each week.  I can't help myself!  This season has been one of the BESTEVER.

Omg I'm the WORST at pancakes!!! I feel your pain! And of course Rere makes the best pancakes ever! They are like clouds! I did not get the pancake gene of the family, for sure! :)
