We're never getting back together...

Thursday Recap:

9:30am:  Breakfast- Banana Smoothie
In the mix:
  • 1 banana
  • 1 cup unsweetened almond coconut milk
  • Lots of cinnamon
  • Dash of nutmeg


12:00pm:  Lunch- "Chipless Nachos"
Hahahahhahaha...yep, 'chipless Mexican' strike again (we were fresh out of arugula or I would have made THESE)  I knew I wanted ONE THING for lunch yesterday and that ONE THING was MELTED CHEESE!  So as a way to have said melted cheese WITHOUT falling off a 'healthy day,' I just took a page from Katie's FAVORITEFOOD and piled my plate with some black beans and mixed em with a little cumin & taco seasoning... 
...topped em with a handful of shredded Colby jack, popped em in the microwave for 1 minute and I was SET! 
Even Scott said "So you had just BEANS for lunch?"  My reply:  YES & THEY WERE REALLY GOOD!J  All the nacho taste + none of the 'nacho calories' = YAY!  


3:00pm:  Snack- 1 tablespoon cookie & cocoa butter with handful of animal crackers 
Well, I had my 'lighter Mexican' lunch covered, but my sweet tooth was still calling to me by 3pm.  I shut it down with a little of this combo.  My theory is that as long as something can fit in one of those small ramekins, you can pretty much guarantee you'll still be OK in the calorie department.  So even if it's not as nutritious as the strawberries I was PLANNING on eating, sometimes a 'controlled indulgence' is just necessary in the middle of the day.

Well, you knew it had to happen again sooner or laterJ  We just love these things TOO MUCH.

Baked chips, spicy shredded buffalo chicken, topped with gooey cheese.. 

...made even better when topped with COOL Blue Cheese cole slaw.... 
We heart thee, buffalo chicken nachos!

6:30pm:  Dessert- Reese's Easter Egg (not pictured)
Yep...now that we were plum out of Coconut Cupcakes, it was back to dipping in the Easter basketsJ  At least last night it was ONE egg       ...and maybe a small handful of Reese's Pieces.

A girl can only have so much willpowerJ

7:00-8:15- Hatha Yoga
I'm starting to thinking Hatha yoga is about 1 notch shy of "Beginner's Power."  I think the only thing REALLY lacking is any attempt at arm balances.   Which is to say: I still was sweating like crazyJ

Alright, well this morning is going to include both POWER YOGA AND whipping up some whipped cream.  How's that for a dicotomy???  I'm making a treat for our annual Cinco de Mayo get together tonight and while trying to whip up some egg white yesterday afternoon, the handle on my mixer OFFICIALLY had enough of me:
Siggghhhhhhhhh.  We've come a long way together mixer, but I can see now we are never, ever, ever getting back together.  Boo.  Until a new (hopefully Kitchen Aid, maybe someday soon???) pays a visit to my kitchen, a desperate call to my Mom brought me the hand mixer that I needed to finish off the dessert this morning.  Although this will ALL be worth it since it involves COCONUT + TRE LECHE CAKE + WHIPPED CREAM!  I'll share on Monday!
