Well...like I said, dinner last night was one of our old favorites that we had been wishing for for awhile: Baked Buffalo Chicken Fingers with Blue Cheese Cole Slaw...
We love, love, love this dish because it gives you all of the flavors of buffalo wings & blue cheese WITHOUT all the deep frying & excess calories!
For the chicken, you marinate the tenders in buffalo sauce and coat them in panko. A half hour in the oven and you are in crunchy, spicy, tangy heaven:) ....
And the blue cheese cole slaw is ALWAYS a hit in our house...Scott is MORE then happy to polish off the ENTIRE bowl, minus my serving:) The crunchy cabbage & carrots with the creamy mayo & blue cheese and topped off with scallions = sooooooooooo good! And perfect for cooling off from the spicy 'wings' ;)
Andddd what's a great dinner without a great dessert, right?? I managed to hold off another day of purchasing the ENTIRE shelf of Christmas treats at Trader Joe's (*I've got my eyes on you, Peppermint Pretzel Slims*) and whipped up a dessert with things we had at home. Which is easy to do if you have Mint Hot Chocolate mix AND Mint Whipped Cream on hand...
Yes...you heard me correctly: PEPPERMINT WHIPPED CREAM! How awesome is that???? Gotta love Target as much as Trader Joe's, sometimes;)
The double minty goodness made for a perfect accompaniment to watching the Rockefeller Tree Lighting:)

Well, as much as I wish it was a Wednesday like LAST week, I guess we can just be happy that THIS week is half way over. And you know what that means! We're HALF WAY TO OUR CHRISTMAS TREE DAY;) I'm already thinking about what I want to make for our festive breakfast and what Starbucks drink I'm going to have on the way. Yes...it's a fest;) Why not, right??? ;)
