Another Simple to Fab dinner....

OK...so this week seems to be the week of simple ingredients that made dinner just a littttle bit more special then normal.  I lovvvveee when dinner is uber fast & super simple to throw together, but really is almost restaurant worthy!  Such was the case AGAIN this week for Rigatoni with Spicy Italian Salami, Roasted Cherry Tomatoes & Capers...

And for the record, we are COMPLETELY in love with "Relaxed Cooking" by Curtis Stone....all the recipes so far have been GREAT!

While the cherry tomatoes were roasting in the over for 10 minutes, Scott crisped up the salami & garlic.  Then it was time for the tomatoes, white wine & capers....and wallah...

DONE!  Soooooooo easy, but soooooooooooo good!  This literally came together in about 20 minutes, but was fancy enough (I think) to serve to guests.  All of the flavors were SLAMMIN together!  LOVE!  (Plus, any excuse to eat crispy salami is a good one, as far as I'm concerned;)

And it was a good thing dinner was quick & easy because I had to get my bake on for both a bake sale today at work AND a cooking exchange on Saturday!  Good thing Kristen's Ultimate Cookies made FIVE DOZEN!!!!!!

And here's a festive little number to try this holiday season:  Gingerbread Loaf!  Try it with a sprinkle of "snow" (powdered sugar) orrrrrrrr Maple Apple Butter (to die for!)

Buttttttttt...I had to hold off on trying ANY of those treats because my crack Crumbs dealer visited my cubicle again yesterday!

Even Mr. "I don't like Eggnog" enjoyed his share:)  These were just...oy...SOOOOOOO. FREAKIN. GOOD!!!!!!!!!!!!!!!!!  Vanilla cake + EGGNOG CREAM CHEESE ICING = Not even RIGHT!  TOTALLY FAB!  Thanks again, Klutzy Cook;)

Soooooooo it's Friday, which means it's Ekat's POTLUCK time!!!!!!!!!!!!  Sooo much good stuff lately!

 

Hope you guys have fun weekend plans!  I have 2 parties and a 10 hour scrapbooking "event" planned...but not before a night out on the town tonight for some dinner & to look at Christmas  lights! :)  Christmas  lights seriously just make the whole world happier, don't cha think?
