Well, if I do say so myself: Yesterday was a SWEEPING SUCCESS! :) My "Scott's Birthday Evening" plans went off without a hitch! :)
I ran home and got the kitchen all ready and festive... :)
...and then I got busy cooking! As per the birthday fellas request: I made eggplant rollatini. But GRILLED EGGPLANT ROLLATINI THIS WAS NOT!
I'm not even going to lie to you and say there was anything even REMOTELY "LESS" about this dish....:)
BUT, I'm ALSO not going to lie to you and say that this was anything short of drop-dead FANTASTIC....birthdays are deserving of such things:)
Seriously, I could have cried:) I was just so happy it turned out so well! Along with the garlic bread, this made for, in Scott's words, a "forbidden good dinner" :) hahahahahhahaha....
And what's a birthday without cake, right?? :)
And I knew JUST the one I was going to make this year: a Tiramisu cake! (the recipe was fairly intimidating, printing out to THREE pages...but it actually came together rather quickly...so don't worry if you want to try it out!)
And it was sooooooo good! Like I said yesterday, I made it the night before to let the flavors meld together, but I have a feeling this baby is just going to get better and better each day (if it lasts that long;)

Oh, and we'll be eating BBQ...lots & lots of Midwest BBQ! :) hahahahahhahahahah....so I'm sure I'll have PLENTY to show you guys! :) But I'm just so happy Scott liked his surprise gift and everything turned out so well...no one deserves it more then him...he's the bestest:)

OH...and I MUST tell you that due to all of the rollatini, cake & ice cream...I decided to push myself this morning to Level TWO of Jillian's 30 Day Shred. Holy Hannah...I knew I was in trouble when the FIRST MOVE was walking push-ups. I barely could make it up the FIVE STEPS into work this morning!;) Getting out of bed tomorrow should be SO-MUCH-FUN!!!! ;) hahahahhahahahahaha....

Everything looks fantastic!! You did such a good job and I know he's the best but Scott is very lucky to have such an amazing wife! Can't wait for the bbq posts!
