So...dinner Wednesday night was literally crackers with peanut butter:) Ya know those nights where your not really that hungry, so why put in too much effort?? Well...that was Wednesday;) However, we DID bounce back yesterday with some Potato Chip Crusted Pork Chops with Pesto and Rosemary Roasted Potatoes....
And we were actually able to slim these down a bit from the original recipe. First of all starting with these:
Now, much like ice cream, I don't 'do' any sort of potato 'baked/crip' nonsense if I'm REALLY wishing for potato chips. There just not even REMOTELY comparable. HOWEVER, THESE reduced fat chips ACTUALLY taste like POTATO CHIPS!!! We have a winner!
Scott got to work crumbling up the chips with some thyme and marjoram...
Then he seared the chops in a small amount of oil on the stove until they were brown. Then he removed them from the pan, coated them in mustard and the potato chips and returned them to the pan to have the coating crisp up. (although we would have baked them for the second half had the toaster oven not been over crowded with the potatoes;)
Another 'slim down' technique was for the pesto. I KNEW the 'oil' portion of the pesto was not going to be of much importance....so instead, I just threw a few handfuls of basil, 4 cloves of garlic and a sprinkle of grated cheese into the food processor and let it whirl up...
And in place of the sour cream and mayo, I swapped them both for Fat Free Greek Yogurt. In recipes like this where the 'fat components' aren't really going to affect any sort of outcome, THIS is the PERFECT chance to make 'healthier' swaps. You will NEVER notice the difference, yet are saving yourself TONS of calories & fat...without ANY lack in taste!! (they are still 'potato chip crusted' after all;)
And I am soooooooooooooo in love with these potatoes! We coated them with a little olive oil, rosemary and sea salt. Roasted for 30 minutes and they come out crispy on the outside and fluffy on the inside:) Soo good:)
And sighhhhhhhhhhhhhhh....last night we finally hit into our fresh JERSEY corn stash.....
Scott said the reason this corn was so good was because 'we waited' (he's VERY anti-"corn out of season":)...and it was WORTH THE WAIT!!!!!!!!!!!!!!!! Super tender and oh-so-sweet! This is what makes summer bearable in my mind;) hahahahahhaahahhaaha.....
Sighhhh...sooooooooooooooooooooo happy it's Friday!!!!!!!!!!!!! :) We have another good dinner planned for tonight, that I have the full intention of enjoying on the sun porch since it is suppose to be mid-80's and GLORIOUS today!
