So I told you dinner last night was going to be a simple affairs...straight from our freezer, pantry and vegetable bin:) Although we had a Scott favorite that we NEVERRRRRRR have....
The boy LOVES ham....so dinner was a SUPER treat for him last night:) He coated the ham (and all it's slices!:) with brown sugar, basted it with orange/mango juice and let it warm up on the grill for about 45 minutes. Easy Peasy...it was probably harder to defrost then to actually cook:)
And I had all good plans of having couscous last night as a side dish, but as soon as I saw the ham...all I could think of was BAKED BEANS! And this turned out to be SUCHHHHHHHHH a CLASS-A, good idea;)...
We cooked 3 strips of Trader Joe's bacon in a skillet. Once they were crispy, we removed the bacon and chopped it up. And THEN added the can of Bush's baked beans and a tablespoon of brown sugar to the bacon pan with all those crispy leftovers:) Since we thought of this last minute, we didn't get to let them slow cook all day (which, to me, is the BEST way to make baked beans!)....so instead we let them simmer on the stove for a half hour and they were JUST PERFECT!!!!! Quick, easy & delicious! I think we'll be having 'quick' baked beans more often:)
And..ummmm...yeah, there's not much else to say about the boiled string beans. Except that they're...well...boiled string beans:) I'm not a big fan of non-canned string beans (I know, I know...:)...butttttt these were leftover in the veggie bin and I was happy they didn't go to waste....
OKKKKK!! SOOOO, now that I've talked to you at lengths about STRING BEANS...let's get to the GOOD STUFF, shall we???? So ever since we had the Mount Vesuvius in Philly a few weeks ago, I have been OBSESSED with having that HOT FUDGE again! :) And since I (fooooolishly) did NOT pick up a jar 'to go'...I had to go with the second best option and I tried my hand at making my own!
And a "lighter" one, at that! Perfect for a random weeknight! I got this recipe from my "Weight Watchers Desserts" cook book, BUT added the cornstarch to make it thicker and to rival the consistency of that delicious "Franklin Fountain" pudding/'it tastes like christmas' hot fudge;)...
- 1 cup fat-free half and half
- 2 tablespoons light corn syrup
- Pinch of salt
- 8 oz. bittersweet or semisweet chocolate (I used 1 cup of mini semisweet chocolate chips)
- 1/2 teaspoon vanilla
- 2 teaspoons cornstarch
- Combine the half and half, corn syrup and salt in a saucepan. Bring just to a boil, whisking until smooth. Remove the saucepan from the heat and whisk in the chocolate (chips) until smooth.
- Return to heat and bring to a boil, stirring constantly. Slowly whisk in the cornstarch and boil for about 2 minutes. (keep whisking!!!) Remove the saucepan from the heat. Serve immediately or store in the fridge for a month.
And our ice cream immediately melted into pools of vanilla and THICK fudge. OH HEAVEN!!! YOU MUST TRY THIS! It took all of 10 minutes TOPS and was just soooooooooooooooo good!
Not too shabby, right??? I figured I needed to do something since our dinner was sooooo 'freezer/stash/simple.' So ya know....the hot fudge was SOLELY for YOUR benefit, my dear readers:) hahahahahahahahaha.....
This week hasn't been going by TOO slow...except when I wondered last night why "Bethenny Getting Married?" was NOT on...only to discover it was only Wednesday night! How much of a bummer is THAT??? Oh well, it's Thursday now and that means one day closer to the weekend:) Hope you enjoy your day!
