Quick Spring pea ravioli with brown butter garlic sauce...

So this weekend marked the opening of the Collingswood Farmer's Market...which I've written about a time or two or twenty on my blog over the years (see more at the bottom of this post)J

Going through the old posts on the market is like a time capsule!  Really didn't anticipate in that first 2010 post that in 2016 we'd be bringing our TWO CHILDREN to the market with us.  I mean...what just happened??  

ANYWAY...so back to the exciting news that I & a few other awesome JERSEY bloggers are joining forces with the Collingswood Farmers Market to highlight fresh produce and develop recipes based on the seasonal produce de jour of the moment.  And there's nothing I heart more than eating in SEASON....weeeeeeeeeeee!  So for my debut post, I thought I'd whip up a little recipe based on your favorite little green veggie:  SPRING PEAS.

Make that:  Quick spring pea ravioli in brown butter garlic sauce...
Sounds FANCY, right??  Ya wanna know the kicker??  These couldn't be easier...courtesy of one little 'cheat' ingredient.  But shhhhh...don't tell anyone, so they can think you made these from scratch.  And you know I have a heart for 'from scratch' ravioli...but sometimes ya just gotta move it along in life and get that dinner on the table in under 30 minutes, ya know what I mean?  Even better:  you can make the ravioli ahead and freeze them so you can have dinner on the table in under 15 minutes...weeeeeeeeeeeeeeeeeeeeee!

We'll start out with those beautiful green peas, which need to be steamed over boiling water for 3-4 minutes....

...and here's the TRULY hardest part of this recipe:  ya gotta let em cool for a little bit once they're cooked.  Seriously, that's the hardest part and the only reason this isn't an under 30 minute meal from the jump.

Once the peas are cool, ya toss em in a food processor or blender with these other luscious ingredients...

...and puree until it looks like THIS: 
I kinda liked the idea of skipping the usual ricotta filling here.  Gives more chance for the PEAS to shine through, ya know?


And then it's time to break out the magic ingredient for QUICK & easy ravioli...
I know, I know and Grandmom forgive me, but they WORK for raviolis in under an hour.  Sometimes ya just gotta take the shortcut, give yourself a break and make life EASY.

Then it's time to line up the usual suspects:  A cookie sheet, peas, wonton wrappers + a small bowl of water... 

...and get to work. 


Add a rounded teaspoon of pea puree to each wrapper.

Add a little water around the edges... 


...and fold the wrapper around the peas...

...and pinch to seal. 

And then do that a bunch more times... 



I also like to give the center a little smooooosh to kinda spread out the peas.  More peas per bite, ya feel me?

You may end up with a few mish-mosh shaped ones, but who cares?J
You could pop the sealed ravioli on the cookie sheet into the freezer and freeze until solid before transferring to a freezer bag for later use OR you can just move on to the next step...

Next step: Time to cook the raviolis!  You COULD boil them but why worry about any of them breaking open?  This pan sear process is not only fool-proof, BUT you also get a little crispy texture to each rav' and how can you not love that bonus?  Add the ravioli (fresh or frozen) in a single layer directly to a pan that has been drizzled with a little oil & heated over medium heat...


Let them cook up for a few minutes (fresh took about 3-4 minutes, but the frozen ones take about 5-6 minutes) until the bottoms get a nice sear and a pretty crisp...

Once the ravs are crisp, it's time to add about 1/4-1/3 cup of water to the pan...

SIZZLE!

...and then pop a lid on the pan to help finish cooking up the ravioli.

After 3-4 minutes, pop the lid off and let the water finish evaporating.  And then:  THAT'S IT!  How easy is that??

And speaking of easy, while the ravioli are working, you can get to work on the QUICK brown butter garlic sauce. 
Heat the butter in the pan over medium-low heat...  




And allow the butter to melt until it begins to turn slightly golden brown...swoooooooon.  Give the pan the occasional swirl to check the color as you go.

Next, toss in the diced garlic cloves and allow to cook for another minute or two, until fragrant.  DO NOT let the garlic burn...or you'll have to make that 4 minute pan sauce all over againJ 

And then drizzzzzzllleeee that beautiful sauce over those browned & crisped ravioli.... 

AMIRIGHT?? 

How GORGEOUS is that green??  It doesn't even look real.  A true sign that those peas are picked at the peak of freshness.  Viva la spring peas. 

Spring Pea Ravioli in a Quick Brown Butter Garlic Sauce
Serves 4
  • 1 cup fresh peas
  • 1/2 cup grated cheese
  • 1/2 cup fresh basil
  • 1 teaspoon olive oil
  • 1 teaspoon lemon zest
  • salt & pepper, to taste
  • 1 package wonton wrappers
  • 4 tablespoons butter
  • 2-4 diced garlic cloves, to taste
  • lemon zest & Parmesan cheese, to taste
  1. Steam fresh peas over boiling water for 3-4 minutes.  Let cool.
  2. Puree peas, cheese, basil, olive oil, lemon zest and salt & pepper until blended.
  3. Lay out wonton wrappers on a cookie sheet.  Fill each wrapper with a rounded teaspoon of pea puree.  Edge each wrapper with a little water and seal wrapper around the puree.  Press fingers around edges to seal completely.  You can also freeze ravioli on cookie sheet and then transfer to a freezer bag once frozen solid.  They'll stay for several months.
  4. Heat a large skillet with a drizzle of oil over medium heat.  Add ravioli in a single layer to pan and allow the bottoms to crisp, 3-4 minutes.  (frozen will take about 5-6 minutes).
  5. Add 1/4-1/3 cup of water to the pan and cover.  Steam ravioli for about 3-4 minutes before removing the lid and allowing the water to finish evaporating.
  6. Top with garlic browned butter sauce (recipe below), and a sprinkle of Parmesan and lemon zest.
    1. Add butter to a small pan and let melt over medium-low heat for about 5 minutes, until golden. Give the pan a swirl ever so often to check the color.
    2. Once lightly golden, add in the garlic and allow to cook for 1-2 minutes or until fragrant.

Weekly Balance, week 6...

Hey, everyone!  I know I'm a day late & a dollar short on my weekly wrap-up, but I'm trying to get back on track after a couple weeks of 'inspiration roadblock.'  I have plenty of things I WANT to write about, but haven't been able to get my thoughts together enough to write a 'deep thoughts' post and really don't want to half-ass it!  But I should have a couple posts this week to get back in the swing.

And in getting back in the swing....weekly wrap-up post comin at ya NOW!

Monday:  Taco dip with tortilla chips, apples & guacamole
This recipe needs to be the poster child of how I LOVE to cook, but trulyreally at the end of the day CAN NOT.  I mean, honestly!  I swear I just fake it on a wing and a prayer most daysJ  
Example #905048:  This recipe called for rice and we were out of white rice and I just wasn't feelin the brown rice that day (although, honestly, you probably wouldn't have even noticed the chewy texture around everything else going on in the 'dip').  So what do I do???  Add what we had laying around the kitchen,  Which was...wait for it....BLACK RICE.  And guess what BLACK RICE does to a pot of tomato-based red chili??  So yes, that is how we came to eat black/purple taco dip to kick off the week.

*shakes head in exasperation*

At least it tasted good....and even the purple-hued leftovers were really good, but...

*still shaking head in exasperation*

MOVING ALONG!


From black rice to rainbow carrots & I SWEAR they are SUPPOSED to be that color!  I'm currently LIVING for those purple/yellow/orange carrot bouquets.  Not to mention this entire dish is 'last meal on earth' contender worthy.  I actually told Scott if we had this same meal for an entire week, I'd be fine with that.  AKA- TRY NOW!



Wednesday:  Chicken puffed tacos 
I tried the Pioneer Woman version this week where you stuffed the chicken in the taco BEFORE taking them for a dip in the hot oil...but then you could barely pry them open enough to top them with all the good stuff...hence that pile of lettuce sitting on TOP of the taco in the frontJ  (oh yes, that IS a taco.  I know...J)  So I nixed that plan for our other 'cos in favor of giving us plenty of room to add ALLTHECHEESEANDGUACAMOLEANDLETTUCE.  I truly love the LETTUCE.
Again, I know....



Thursday:  Pasta with Tomato Cream Sauce 
This meal came about because the day COMPLETELY got away from me (although with what?  At this moment I have ZERO CLUE.  #momlife)  But after flipping through my Pioneer Woman cookbook for those above tacos, I found this recipe and realized we had all the ingredients and that this meal was going to come together in .4 seconds.  I countered that cream in the recipe with replacing 3/4 of the spaghetti with zucchini noodles.  They all played nicely together in the pool of creamy, dreamy sauce.

Friday:  Lunch/dinner at Palace of Asia
2 yoga classes and a terribly rainy & blustery day to end a week of terribly rainy/blustery days led to a craving for Indian food could NOT be ignored for one more moment.  The BEST part of Palace of Asia (besides it being a GORGEOUS restaurant) is their weekday lunch buffet, where you can try ALLTHETHINGS.  And for someone who does not know too much about Indian cuisine, this is a great introduction.  And even after going more times than I can count, I STILL have no clue what my veryfavoritedishes are from there, but I'm always willing to go back as much as possible to try to figure it outJ



Saturday:  Take-out baked ziti + cheesey garlic bread + salad
NEEDED.  At least Scott & I shared the entree with leftovers still lingering in our kitchen.  A great way to portion & 'keep it all in check.'



 Sunday:  Homemade Ravioli + meatballs + salad
I'm not sure anyone enjoyed our Mother's Day feast as much as LilyJ  This coming off the fact that I swear she ate a quarter pound of that ziti on Saturday nightJ


Splurges:

Vanilla Joe-Joe's:
Katie's "If you're good, I'll get you these" bribe impulse purchase of the week.  I had 2 of these a couple nights last week.



Wednesday Lunch:
I wouldn't even call this a 'splurge' as much as I would call it a 'better way to eat not-so-good-for-you' food.  My friend had told me about these and I was SO glad I had picked em up when a RANDOM craving for a hot dog took over.  And rather than another trip to Stewart's, I tossed one of these in the toaster.  And for 150 calories & 4.5 grams of fat, ya really can't do much better on the 'dog front.  



There was also cake on Mother's Day...and in true "I can't cook" fashion (see above), I managed to make the thinnest cake with the gooey-iest frosting the world has ever known.  I can't explain myself.

Monday:  Vinyasa Hatha yoga

Tuesday:  Taught vinyasa yoga + tap class

Wednesday:  Power yoga + Body Pump  (THAT was all fun & games till it wasn't...hahahaJ)

Thursday:  Taught 2 gentle yoga classes

Friday:  Gentle + power yoga

This week's balance...

Week one, two, three & four...

Monday:  Greek Salsa
Didn't I JUST post on Friday about how I set a menu for the week and try to stick with it??  Well, here's already an example of how some days don't go as planned and of course it's the 1st meal of the weekJ  Plan = Salad.  Unplanned = a larger lunch of Greek salsa (and swooon, pita chipsJ) because I ended up with a few unplanned meetings and lunch became dinner with no time in betweenJ  
Life happens.


Tuesday:  Puffed tacos with Edamame guacamole + Trader Joe's fire-roasted peppers and onions

Also planned:  Lettuce wraps.  Too fun to ignore:  Puffed tacos.  These are already on tap for the menu this week too, because we COULD NOT get over them.  I don't fry in the house often or hardly EVER, but the 1 minute dip in hot oil with the corn tortillas just creates MAGIC.  Crispy AND pliable at the same time.  Magic, I tell you!
And the edamame guacamole was a combo of curiosity met with a bag of shelled edamame that needed to be used in my freezer.  Verdict:  it was fine ON something.  But as a chip dipper?  No, thank you.  Pass me the good old avocado guac, please!

Oh yeah...and there may or may not (or definitely MAYJ) have been a couple fried tortillas topped with cinnamon, sugar & a dust of nutmeg.  Because...do I need a reason?? 


 Wednesday:  Spinach artichoke cups + salad 
Also known as:  An excuse to eat (my favorite guilt free!) spinach artichoke dip for dinner under the guise of using up old, broken up wonton wrappers to make cups.


LOVED the coating and CRUNCH of this chicken!  I'm going to make it again ASAP, but this time with a more savory slaw, since that's ma jam.


Friday:  Lemon spaghetti + salad and a side of "The Office"
I LOVEEEEED this Giada recipe SO much because it was so simple & classic.  Just like Pam Beesly.
And yes...Friday dinner, especially cozy spaghetti, in front of the TV is just SOMUCH happiness.


I'm currently LIVING for this soup...so much so that I just ate the leftovers for lunch and think I need to have a pot of this laying around for lunches EVERY week.  We slashed the heavy cream in half (used 1% for the rest) and it was just...homeJ Especially after a FULL day at yoga teacher training.  (more on that below)


Sunday:  Baked chicken chimichanga with mashed avocado
One of Scott's very own Pinterest pin picks and a great way to kick off Cinco de Mayo weekJ In full disclosure, I totally broke my side salad rule in favor of another one of these 'changas.  They were just toodamngood, but definitely not the smartest choice.  If I had one and a salad, it would have felt just as satisfiying.  
Oh well, onward!



Splurges:

Tuesday:  That cinnamon-sugar tortillaJ

Wednesday night:  1 scoop...


Saturday:  Mini Rocky Road Blizzard filled with marshmallow
Scott told me about the new 'core' blizzards last week and I wanted to try em ASAP.  But I gotta say that marshmallow center was kinda way too SWEEEEEEEEEEEET.  And I'm a gal who can HANDLE HER SWEETS!


Sunday:  Homemade cake pop at Katie's friend's birthday party...weeeeeee!

My FAVORITETHINGEVER of the week:  Toast with hummus, diced marinated grilled artichoke hearts (Trader Joe's), diced kalamata olives & feta
This felt so super Mediterranean and was BEYOND tasty!   I had this with an orange for more breakfasts or lunches in the past two weeks than I can count.


I made these for an on-the-go snack, so it was a good thing I snapped the picture 'before' because as soon as I grabbed these on the go, they toppled over in the container and turned into a big pile of strawberry/cucumber messJ  But at least it was a tasty messJ

Exercise:

Monday:  Taught gentle yoga

Tuesday:  Tap class

Wednesday:  Power yoga

Thursday:  Kundalini yoga  (umm...intense.  In many ways)

Friday:  NONE!  Felt lousy.  Knowing when to rest is just as important as exercise!

Saturday:  Helped facilitate three yoga classes at this year's teacher training.  I feel so lucky to help the new group of teacher trainees and remember where I was a year ago.  Still so crazy to have gone through that amazing experience and actually BE a teacher THIS year.  I'm incredibly humbled & honored to be back there and experience it all again on 'the other side.'J

Sunday:  Tone it Up Beach Bod Workout + Inner and Outer thighs  Love those girls!  Even Katie likes when I put on the videos "with those 2 girls"J
