Another upgrade needed...

Thursday Recap:

8:00am:  Coffee with creamer

9:30am:  Breakfast- "Carrot Cake" Smoothie
So I thought this concoction would be a totally fun & appropriate smoothie for the upcoming Easter season...

  • 1 cup unsweetened almond milk
  • 2 shredded carrots
  • 1 scoop vanilla protein powder
  • Cinnamon
  • Dash of nutmeg & ginger
Full disclosure:  It TASTED good, but neither the Magic Bullet NOR the Ninja could chop up those carrots fine enough that you didn't feel like you were CHEWING the smoothie.  If you have a SUPER HIGH SPEED blender:  Go for it!  But I got tired of sipping/chewing about 1/2 way through.  Bummer.  It was such a pretty color too!

...well, before I blended in a handful of spinach, just becauseJ 
Guess I'll have to stick to my "Carrot Cake Oatmeal" till I upgrade my blender...AGAIN!

12:00pm:  Lunch- "Happy salad" 

& "Health Nut" Toast with butter and flax
...OK...make that 2 slices.  After my unsatisfying smoothie, 2 slices of bread seemed like a splurge, but a worth it one since I felt satisfied for the rest of the afternoon.  Happy salad + toast makes everything betterJ

6:00pm:  Dinner- Italian Wedding Soup
That cold wind ushering back into NJ just CALLED for soup last night and this one just couldn't have been easier.

Starting by sauteing:
  • 1/2 large onion
  • 3 minced garlic cloves
  • 1 diced carrot
  • 2 diced celery stalks

Once the veggies have sauteed for about 10 minutes, toss in a box of chicken broth and some salt & pepper and bring to boil.

Meanwhile, I rolled up some mini meatballs (mixed with breadcrumbs, Parmesan cheese, garlic powder, salt & pepper) and tossed those into the pot once the soup was boiling.  Cook for 10 minutes. 

And finally, I added in a box of defrosted chopped spinach AND my favorite... 

Boil for another 10 minutes and your '30 minute/one-pot dinner' is complete!

I was worried this was going to be kinda bland, but NO WAY!  All of the veggies mixed with the little meatballs just hit the spot. 

EVERYONE downed this one! 

6:30pm:  Dessert- Coconut cake
...even if I think this one went over just as wellJ 

7:00-8:20pm:  Hatha Yoga

And then I spent the rest of the night FIGHTING the craving for MORE sweets!  It was a tough one, but I won the battle.  At least for last nightJ
