Hey, everyone! Hope you had a great weekend. And as suspected, just when I get back on a "blog swing," our Internet shut down unexpectedly yesterday until almost 9pm last night. (so strange how much I felt like I was on a desert islandJ) Sooo with that said, I'm back today to give you a quick THREE day recap!
First up was Saturday night, where we dressed up Miss Katie in some of her Christmas finest...
...and headed down to Collingswood, which looked like an absolute WONDERLAND, complete with carolers! WHO HAS CAROLERS??? I was in heavenJ
And taking Katie to her FIRST trip to the POP SHOP! How it took us THIS long to bring her there, we have no ideaJ
And spied a few new grilled cheeses I had wanted to try (not to mention the cheesesteak/pretzel one is TO DIE FOR!), but my eyes & stomach settled on the CHEESESTEAK MAC & CHEESE that was NEW on the menu! CHECK OUT THIS THING:
Mac & cheese sprinkled with shaved steak, crispy onions and surrounded by their new fried soft pretzels. Oh yeah, and a heaping dollop of sauteed veggies just to round out all that sin happening on the right side of your screen. So wrong, yet so rightJ I tried to shovel as many of those veggies in my face and managed to bring home about 3/4 of that mac and cheeseJ This was a MODERATION number, FOR SURE! But it was good. Oh, so goodJ
And speaking of moderation, a few sips of this seasonal EGGNOG MILKSHAKE was JUSTTTTT enough to feel festive & happyJ
Katie dug her night at the Pop Shop too! I doubt it'll be long before we show up here againJ
Sunday I tried to REEL IT IN A BIT! Well...AFTER our Sunday morning breakfast of cinnamon rolls, of courseJ
After these rolls, it was RIGHT to boxing class I went and was totally TKO'd afterward! Probably didn't help that I was already pretty beat up from both Friday AND Saturday morning Power Yoga! Friday's class had an emphasis on balancing poses which meant LOTS of shoulder & CORE work! (I DID manage to balance a 'candlestick' for the first time!) Ouch, ouch, TRIPLE ouchJ
After boxing, I ran a couple errands...including a quick trip to the grocery store where I may have bought my most healthy impulse purchase of all time...
I was just SO THIRSTY after class, that that fruit was IRRESISTIBLE! I paired it with some cheese & it made for a perfect lunch!
What ALSO happened when I left the gym, was the FIRST SNOW of the year began to fall!!! I took my fruit cup and enjoyed it while watchin the snow fall. PEACE! J
The rest of the day was spent listening to Christmas music & putting up nearly all of the rest of my decorations...stopping for a quick "hot chocolate break," of courseJ
Meanwhile, dinner was a TOP NOTCH mix of Prosciutto wrapped pork chops with caper & lemon sauce, roasted Parmesan green beans and, to round out our 'family dinner,' a baked potato, of courseJ
For the beans, I just trimmed em, roasted em with a little olive oil & salt for about 20 minutes at 425 before tossing them in a bit of Parmesan cheese. Green beans are NOT my favorite, but these roasted ones might be a new fav! They were AWESOME! In Scott's words: "Now THAT was a good dinner"J
We finished off the weekend with our last leftover cupcake from Crumbs. We THINK it was salted caramel /coffee, but it's still up for debateJ
Whatever it was, it was goodJ
And that brings us to my normal Monday Recap!
8:00am: Coffee with creamer
9:30am: 1/2 Gingerbread Bagel with Cinnamon Laughing cow...
1/2 bagel + 1 wedge = 175 calories. I can't say it was the MOST FILLING 175 calories, but a pretty darn festive oneJ
12:00pm: "Happy Salad"
1:30pm: Snack #1- Toast with butter & flax
3:00pm: Snack #2- Coffee with creamer + 3 saltines with peanut butter
5:30pm: Dinner- Soy & Maple Salmon Salad
Despite the fact that it was cold & dreary yesterday, I found myself CRAVING salad. And trust me, I TRIED to talk myself into something more warm & cozy...but my brain just said SALAD! AND SALMON! Why did I even ATTEMPT to fight this when it's such a rarity??J
In the mix:
- Lettuce
- Salmon (marinated in a teaspoon of maple syrup, soy sauce & olive oil)
- Tortilla strips (NEEDED CRUNCH last night)
- Green onions
- Carrots
- A quick dressing of the marinade ingredients- 1 teaspoon maple, 1 teaspoon soy sauce, 2 teaspoons olive oil
6:30-9:00pm: Beginners power & Gentle yoga
9:30pm: Dessert
So it was late after I got done those classes, but I just COULD NOT resist trying yet ANOTHER impulse purchase, albeit a FESTIVE one this time!J
I made the mistake of saying "I'm not gonna dish it out, I just want a TASTE of each."
Well, than this happened:
The eggnog was very good, but that Peppermint Bark??? HOLY HELL, it was PHENOMENAL! Fresh & minty and studded with dark chocolate CHUNKS! I wasn't even mad I overindulged a bit on that one! TIS THE SEASON for this kind of deliciousnessJ
Alright...well, now that I chatted your ear off, I better get my day started! ONE THAT INVOLVES MORE SNOW! WEEEEEEEEEEEEEEEEEEEEEE!
