Convincing enough??

Tuesday Recap:

8:00am:  Coffee with peppermint creamer

9:30am:  Breakfast- "Angel/Devil Oatmeal"...

Angel:
  • 1 cup unsweetened almond milk
  • 1/4 cup dry oats
  • Dash of vanilla & chia seeds
Devil: 

Aka-the greatest stuff to exist in the history of earthJ

All together now: 
The Cookie Butter just MELTS into pools of wonderfulness in the oats...and at least I could rationalize that eating cookie butter with oatmeal was better than along with the standard pretzels or vanilla ice cream.  PLUS: I can STILL call it breakfast. 

RIGHT??

12:00pm:  Lunch- Green Monster 
  • 1 cup unsweetened almond milk
  • 1 frozen banana
  • Dash of cinnamon & nutmeg
  • 1 tablespoon peanut butter
  • As much spinach as you can cram in the blender!


Made HAPPIER in a Christmas glass! 

Even Katie joined in on the GREEN/Christmas funJ 

Only SLIGHTLY less scorched than LAST TIME!

3:00pm:  Snack #2- Yep, more peppermint coffeeJ  (can't stop.  won't stop)


6:00pm:  Dinner- Smothered stuffed chicken, mashed potatoes & roasted broccoli

Well, last night's dinner came courtesy of these 2 ingredients staring at me in the fridge just NEEDING to be used up...
I get suckered into buying basil EVERY WEEK since this little pouch was $1.50....but then you HAVE to use it ASAP or it turned black quickly.  I came up with 3 dinner ideas (more to come another time...MWAHAHA!J), but here's the one to win the night...

I pounded flat some chicken and filled them with sliced red peppers & some torn basil leaves... 

Then I folded it over, tucking the ingredients inside, giving it a quick egg wash/panko coating and baking at 400 degrees for about 40 minutes...

I also tossed in some broccoli coated with olive oil, salt & garlic powder and let that roast up right along with the chickenJ

While the chicken & broccoli were working, I made a quick roux of 1 tablespoon butter & 1 tablespoon flour and let that cook for a minute before whisking in 1/2 cup each of chicken broth & 2% milk and allowing that to simmer on medium heat until thickened (about 10 minutes)... 

Once it was cooked, I tossed in the goat cheese and allowed that to melt before removing the sauce from the heat and stirring in some MORE torn basil... 

I also had a pot of diced potatoes simmering away next door.  Once they were fork tender, I hit em with my masher... 

...and then had the most excellent idea of stirring in a bit of the goat cheese/basil sauce!  YUM x 10000! 

I piled the plate with a little mashed potatoes, topped it with the chicken and then SMOTHERED it with the goat cheese sauce...
I probably should have gotten ANOTHER picture of the stuffed chicken, but I literally inhaled this as if someone was gonna take it away from meJ  Creamy mashed potatoes, crunchy stuffed chicken all COVERED in the tangy and cool goat cheese sauce = awesome!

Oh yeah...and roated broccoli is ALWAYS a winner! 
SUCH a good meal!  Totally fulfilled my need for a 'meat & potatoes' dinner last nightJ  Yum!

8:00pm:  Dessert- Pumpkin cupcakes   
Which we had popped in the freezer after picking them up at Crumbs in Philly last month.  All ya gotta do it pop 'em out of the freezer and let em sit on the counter for about an hour or so before you're going to eat 'em and they thaw perfectly.  The perfect solution to not having to scarf a 4-pack of cupcakes down within a weekJ  Spread the joy, folks.  Spread. the. joy!

And my sole workout of yesterday came from taking Katie & Penny on a quick walk to our neighborhood park that had been transformed into a beautiful winter wonderland!  Working out came from chasing Katie amongst the decorations...
...and up & down the slide 85 timesJ  I'm OK with this.
