Hey everyone! So Tuesday night's dinner plan quickly unraveled with the combination of Scott's late arrival home from work & us rushing out the door to head to our niece's awesome spring musical concert. So let's just say dinner was on the REALLYFAST side. But never fear, Week of Mexican came back with a vengeance last night...
Wednesday recap:
8:00am: Coffee with creamer
9:30: Breakfast- Honey nut cheerios
Inspired from Katie shoveling a few of these in my mouth (complete with hysterical gigglesJ)
10:30am-12:00pm: Power Yoga class
Exciting day when I realized I actually could balance another arm balance! Much to my shock, my "flying crow" actually took 'flight'J Always a nice surpriseJ
12:30pm: Lunch- Turkey with basil & tomatoes...
OK, I'm fibbing here a bit as I actually met for some Mexican lunch with some AWESOME friends yesterday (hi, ladies!), but this was my yummy lunch from Monday afternoon. Same ole turkey tenders & laughing cow, jacked up with some roasted tomatoes & chopped basil. Honestly, that basil & tomatoes were about to go to the 'great beyond' anyways, so I figured this was an easy and delicious way to use em upJ
3:30pm: Snack- Grapes
6:00pm: Dinner- Grilled stuffed Avocados & sauteed zucchini
YUM, right??? This was a totally light & healthy dinner that was made in lightening speed! First, I halved some avocados & scooped out a bit to make a little room for the stuffing. You can either eat them like this...orrrrrr...toss em on the grill for a few minutes to give em a char kiss & a warm, creamy center. Divine!
The stuffing was a quick mix of:
- 1/2 cup cooked quinoa
- 1/2 cup diced roasted red pepper
- 1/2 cup corn
- 1 can rinsed & drained black beans
- 1/2 diced red onion
- The scooped out avocado bits
- 1 tablespoon taco seasoning
- 2 tablespoons diced cilantro
I had actually made this the night before and it gave the flavors a REALLY great chance to blend. I recommend doing this if you can, not only to enhance the taste but then dinner comes together even QUICKER.
Once the avocados are grilled in about 2 minutes, toss in some quinoa Mexican filling and WALLAH!
I always like when I'm excited for dinner and then they turn out even BETTER than I expected. All of the bites tasted SO fresh with the cool & light stuffing/salad, made only better when scooped up with the melty avocado. Try this ASAP!!
And on the side: one of our farmer's market staples, sauteed zucchini...
About 10 minutes sauteed with garlic & oil and these are like candy. Katie INHALED these!
