Cereal & metaphors...

Thursday Recap:

8:00am:  Coffee with creamer

9:30am:  Breakfast- The return of the multigrain waffle with flax seedJ
Ahhhh...sweet reunionJ

12:30pm:  Lunch- 
So I could not figure out WHAT I wanted for lunch yesterday, but when I opened the fridge door the 2 things that jumped out at me were the STRAWBERRIES & the GORGONZOLA!  So I took a page from my "Strawberry Chicken," I decided why NOT have the worlds most random lunch & combine the 2??
Oh yeah...and let's throw in a small bowl of Pop Chips to just complete the 'weird lunch trifecta'...hahahahahahaJ  And ya know what?  It hit the spot perfectJ

3:30pm:  Snack-
Yes, everything in my being was telling me I SHOULD have a handful of almonds for a snack.  Buttttt my true heart just wanted... 
...which I quickly discovered that a boring old box of ORIGINAL Life cereal is FAR less exciting than CINNAMON LIFEJ, as I had to sprinkle the entire bowl with a deluge of cinnamon...   
LIFE, in general, is ALWAYS more fun with a sprinkle of cinnamonJ  

Yep, I just made a life metaphor with my cereal.  It's Friday.  Forgive meJ hahahahahhaha

ANYWAY!

5:00-6:00pm:  Body Jam class

This was one of the first recipes I ever pinned to my Pinterest board, and one I actually moved to my "Pinned & Made" folder early on (don't even get me started on the ratio of pinned to madeJ) hahahahhahaa)  The recipe sounds SUPER FANCY, but is actually sooooooooooooo easy!  

First up is the roasted asparagus (at 350 for 30 minutes)...

Then I boiled some pasta, and while I had it draining in the sink, I added the 1/2 cup of balsamic RIGHT to the spaghetti pot in an effort to do ONE LESS DISH with tonight's dinner!  hahahahahhaa... 

After you let the balsamic boil down for about 5 minutes, you add in a 1/2 teaspoon of brown sugar and a few tablespoons of butter and allow that to melt all together... 

Once the butter is melted, toss in the pasta, asparagus & 1/3 cup of grated cheese and MIX, MIX, MIX! 

How easy is THAT???  And I'm tellin ya, the balsamic/butter sauce is NOT to be believed!!!  Boiling the balsamic (and the help of the pinch of brown sugar) sweetens it up, while the butter makes it lovely & luscious.  And we swapped penne for angel hair in the recipe, so you occasionally get a nice twirl of roasted asparagus mixed in.  DELISH!

And THIS ONE couldn't inhale this dinner fast enough.  I couldn't get over the SPEED to which she shoveled it in... 

 ...all with the perfectly crossed legs of a lady...hahahahahahhaJ

Sooooooo how bout we went from me BEGGING Scott to turn on the air conditioners (he cavedJ), to me considering putting the heat on??  Scott said he was outside when the temperature dropped about 15 degrees within 30 seconds.  What a crazy way to kick off Memorial Day.  (Even if us Jersey-ians are SUPER PROUD that our beloved shore is OPEN FOR BUSINESS after Hurricane Sandy's destruction in October)  And speaking of the holiday, we are putting our "Friday Tradition" on hold tonight  since we'll be having the likes of hamburgers & hot dogs this weekend...along with quite a few other goodies!  I'll try to blog again over the weekend since there may be A LOT!  Hahahahahahahaha...hope you guys have great plans!
