8:00am: Coffee with creamer
10:00am: Breakfast- Apple Crumb Vitatop
12:30pm: Lunch- Cheddar Soy Crisps & fresh strawberries
2:30pm: Snack #1- 1 Laughing Cow Wedge
4:00pm: Snack #2- 1/2 bowl Brown Sugar oatmeal squares
OK, so maybe this was a little indulgent as a snack since I wasn't THAT hungry, but Scott walked in with these from the store & I could think of nothing but diving in and trying them. So I did. And they were good. I wasn't unhappy. The endJ
Mmmmmmmm...one of our all-time favorite salads!
It started with a MAMMOTH head of lettuce from the farmer's market...
Then the 'lightened up' guacamole dressing made with:
- 1 avocado
- 2 tablespoons of nonfat Greek yogurt
- a drizzle of olive oil
- salt & lime juice...
And finished off with
- Grilled chicken coated in Montreal Steak Seasoning
- 3 slices crisped bacon, crumbled
- 4 diced scallions
I'm regretting at this very moment that I didn't make EXTRA of this for lunch today as I'm now drooling at its memory! Salty & spicy chicken mellowed by cooooool avocado dressing with just a little crunch of smoky bacon...too. die. for!

6:30-7:45pm: Beginners Power Yoga
This class was more "Power" than "Beginners", so that mixed with this little bout of humidity made for an extra sweaty Monday workout. I'm ok with this!
And I can't even complain about humidity and weather today given the images of the massive devastation in Oklahoma. Mother Nature is the scariest force in the world. Take a moment to stop & be EXTRA grateful for the people in your life & the simple luxury of having a roof over your head. Our hearts & minds are with the entire region.
