Dinner last night was a colorful assortment, no??
I don't think I've ordered or made chicken francaise EVER and these are some of the LAST ingredients I'd ever expect to CRAVE for dinner...and yet, this was just what I was wishing for last night:
After sauteing up some flour-coated chicken, I deglazed the pan with some white wine and tossed some garlic into the pan...
Once the wine was almost dissolved, I added some capers, a few tablespoons of fresh lemon juice and about a half up of chicken broth and brought that to a simmer. I added the chicken for a few minutes and let that cook in the sauce on both sides.
Remove the chicken from the pan *one more time* and melt a couple tablespoons of butter into the pan. Heat the sauce until it becomes golden and delicious...
Plate the chicken and top with that flavor bursting sauce...yum! Super simple but exploding with simple flavors from the wine, capers & lemon...just lovely!
And for a side, it was time to break out my lovely black rice again;) I recently read that black rice has more antioxidants than BLUEBERRIES!! Who knew?? I just kinda thought it was cool;) I added 3/4 cups of rice to 2 cups of boiled chicken broth with a tablespoon of crushed garlic thrown in....
Cover the pot and let that simmer for about 25 minutes ("Minute Rice" this is not:)
And to bump up the flavor a little more (along with the garlic), I turned to some of these:
A few minutes in the microwave and then a little zuzzz through my chopper (thanks to my cousins Philip & Gina;)
...and I stirred the onion "mix" right into the cooked rice. Reallllllly like this way of cooking the rice...it had huge flavor from the garlic & balsamic onions and not one drop of butter, oil or salt! Who can complain about that??
And some peas....which, again, are just peas;) hahahahahahahahaha....
So I feel totally under the weather today, just DRAINNED and extra tired. I think I've written nearly every word on this post wrong at some point or another, so I think that means it's time for me to scram for the day...have a good Thursday, everyone!:)

This looks delicious, Donna!!! I've never had black rice but with more antioxidants than blueberries, I am gonna have to give it a try. It will be a nice break from brown rice, too!
