So did I tell you my blog post today was going to be SWEET?? Well, that's because almost all of our meals on Sunday were based on.......
And those are some NO JOKE Sweet potatoes, no??? Scott was pretty darn happy to get a whole bushel of these HUGE taters at the farmer's market for $4:)
Might as well put them to good use, right?? :) I had been wanting to make this recipe for over A YEAR and finally the stars aligned (aka-I had all of the ingredients) and it was time for some FALL baking to be done! And totally worth the wait for Cooking Light's Sweet Potato-Streusel Quick Bread...
Made only just a LITTTTLE bit better with some butter I mixed with cinnamon & sugar:)
...But only a little bit better...this bread was pretty darn good on it's own;) I actually packed a slice for breakfast this morning too:)
And very soon after breakfast, I got started on Sweet Potato Project #2: Sweet Potato Gnocchi! And it's a good thing I started early because these babies were TIMMME consuming! While we ate breakfast, I boiled up those 4 huge boulders Sweet Potatoes and once they were cool, I got my mash on;) I armed myself with my Grandma's recipe and got busy mixing the mash with 2 eggs, flour, cinnamon & allspice...

I don't know what it was, but it took FOREVERRRRRRRR to get the dough to the right consistency...it was soooo sticky! I actually ended up working in small portions (about 12 by the time everything was said and done!) and rolled each portion out into a lonnnng rope of dough:
And then cut them into little dumplings and made them 'show ready' by rolling them with a fork. See, not DIFFICULT...but a process:) ...
Not to mention, the FOUR potatoes made enough for about 5 meals for the two of us! No lie! We have 3 HUGE bags in our freezer, so you might just see WEEKLY Sweet Potato gnocchi dishes for awhile;) hahahahahahhahahaha....
So anyway...onto our sauce of the evening. I made a Brown Butter/Sage/Cinnamon sauce...which is pretty self explanatory:) hahahahhahahaha. I added 3 tablespoons of butter (& 4 sage leaves) to the pan and let it melt & brown sloowwwwwly (watch it! It'll burn in a second!). Once the butter was brown and the sage was crispy, I added a sprinkle of cinnamon to the pan and left it on low heat....
Meanwhile, I boiled my gnocchi until they were done (these took about 15 MINUTES! Not sure if it was from all the flour I had to use or what...but it took MUCH longer than my normal '7 minute-no fail pasta' rule;)
After the gnocchi were done, I threw them into the butter pan to mix in all of the flavors AND to get a nice crisp on the bottom...
And wallah....Brown Butter/Sage/Cinnamon Sweet Potato Gnocchi:) Talk about FALL comfort food:)
I already have a plan for a different kind of sauce next time....but I might be trying it solo:) Scott is skeptical on this idea too;) hahahahahahahhaa....you'll see;)
So I'm just gonna come out and say it: NOT enjoying this daylight savings business! Sure, it was all fun & games when we all got to sleep in an extra hour (although I'm sure parents got as much out of it as we did: the owners of a "Still on Amish time/Up with the sun" Chocolate Lab!) but hauling myself to the gym after work when it was ALREADY dark before class even STARTED was a real test in the "Monday Motivation" :) Oh well...better steel myself up! Can't use a little dreariness as an excuse this early in the season;) Atleast it's making for sunnier mornings, so I had a little more motivation than normal to get through Body By Bethenny this fine mornin;) Guess you gotta take the good with the bad, right?;)
