A little prep goes a lonnggg way...

Well...last night's dinner went from this....

To *poof*  THIS:

Yep...my mystery item of last evening went into making some quick homemade butternut squash raviolis:)  A little prep work on Wednesday made for a SUPER easy dinner last night...
I followed Kristin's recipe and used wonton wrappers in place of rolling out fresh dough.  Not sure my Grandma would approve, but I must say it was quite easy:)

I also loved this way of cooking up the 'olis, since I was kinda scared they would have burst in a pot of rolling boiling water.  Instead, I added the frozen overnight raviolis to a hot skillet....

And let them crisp up a bit on the bottoms...

Next I added a half a cup of water to the raviolis and covered the pan with the lid.  They simmered away and steamed up perfectly....

Meanwhile, next door, I worked on the easiest sauce EVER...

I dry toasted up a handful of chopped walnuts.  Once the nuts were golden brown, I added the butter and let it cook until THAT was golden brown as well...

Once the raviolis absorbed the water and the butter was brown, it was time to plate!  A little sprinkle of crisp bacon bits on top and we were in business...
These little babies were SOOOOOOOOOOOO flavorful...MUCH more so than the sweet potato gnocchi.  You REALLY got a sweet flavor from the squash and the savory butter, walnut and smoky bacon sauce was a perfect compliment.  I must say, the walnuts were the best part...they were just. so. flavorful!

And dessert was just as yummy as dinner, as I came into work on Thursday morning and found THIS sitting on my desk:

A friend had picked up a NYC "Crumbs" fresh Apple Pie cupcake!  A spice cake STUFFED with apple pie filling and topped with frosting and cinnamon crumbles.  Scott was more than happy to obliged splitting it with me:)
As Scott said:  "That was too good"...how they make their cupcakes so LARGEEEE but still sooo TASTY and NOT DRY is beyond me!  I just spied a list of their Christmas flavors and oh holy hell...it is going to be a "Crumbly Christmas"...let me tell you:)  (Thanks again, Steph!)

So speaking of Christmas, I heard "Have yourself a Merry little Christmas" & "It's beginning to look a lot like Christmas" on the radio on my way to work this morning...sighhhhhh...my heart nearly imploded:)  I was SOOOOOO excited:)   Well, that AND that it's Friday...and speaking of Friday, that means it's EKat's Potluck day! :

Those cupcakes sounds pretty darn tasty! Those raviolis don't look too bad either!

Those wonton wrappers are such a great idea. I've only ever used them for making, well, wontons, but now I see there's a whole world of untapped possibilities. Those cupcakes also look heavenly.

Yuummmyyyyy these look so incredibly tasty!! And I bet they were absolutely packed with flavor. I love anything with pumpkin and sweet potato in them, they are simply divine!

Amazing! It looks delicious and I think using wonton wrappers to hurry it up is really a smart thing to do.
