Happy Wednesday everyone...hope you're having a great week so far:)
So since we had Pumpkin Polenta with Spinach & White Bean for dinner last night (which took all of..hmmm...10 minutes to make! Love that recipe!), I decided to show you what we had for dinner one day last week while our computer was acting shady;) And I LOVED this recipe because it was super simple, but made for a seemingly "fancier" Tuesday night dinner....we had Pear-Cheddar Turnovers with Hot Bacon & Spinach Salad...
You used puff pastry (in this case: pastry shells, as that was what I had in the freezer), rolled them out and sealed them around diced pears, cheddar cheese & tarragon....
15 minutes in the toaster oven and out popped these golden brown delights! The pears & cheddar made a great sweet & savory center, while the pastry made them seem so decadent for something that was whipped together in under a half hour!
And I just HEART all forms of spinach salad and this side dish is no exception: crisp bacon, craisins and scallions mixed with a little of the bacon drippings and a squeeze of lemon juice. Seriously: TOO. DARN. GOOD! :)
And while we're talking about decadent: Just check out this macaroon my friend got for me:
Insane, right???? And I thought those sweet potatoes were boulders:) And this just happened to be the world's most PERFECT coconut macaroon! Slightly undercooked to give off nothing but a sweet coconut flavor (WITH NO FILLERS!!! SOOOOO IMPORTANT IN A GOOD MACAROON:) LOVE, LOVE, LOVE! Thanks, M! :)
