Morning everyone! We had a pretty cozy dinner last night that was almost worthy of a quirky thanksgiving dinner. Ya know, if the pilgrims chowed on pork chops rather than turkey that is:) ....

We'll just start with the best of the meal, shall we?? Let me tell you, this side was KILLER! I followed this recipe for baked Sweet Potato & Pear casserole, but swapped the canned sweet potatoes for fresh. (which is why it ended up having to go in the microwave for 10 minutes at the end...but I'll digress;)
And the best part was the brown sugar and pecan crunch topping. A little decadent, but a little sugah went a lonnnggg way in this dish. After it's extra spin in the microwave, the topping just melted into the dish and swirled every piece of potato & pear with brown sugar loveliness. Oh my, it just made you feel warm & toasty:)
And my toaster oven was hot real estate last night, since my sweet potatoes shared space withhhhh...
YES! I finally tried to cook NON-SAUCED cranberries! Just look at these jewels:
I mixed them up with more brown sugar, honey and cinnamon and let them roast in the pan at 400 for about 10 minutes (stirring occasionally)...
Not gonna lie: these were CAPITAL-T TART! (Even with a sprinkle of sugar after they came out of the oven). I think MIXED in with something, they would have been delicious but they were a bit tough to take straight on:)
And just check out my cranberries in the mist from the sweet potatoes:) Give em good face, cranberries;) WORK IT! ;)
And of course: the main event-The simple pork chop:) Nothin fancy here, just breading and baking...but they wereeee pretty tasty dipped in the cranberries:) Just FYI:)
