Delayed Weekend Wrap-up...

Hi everyone...again, I'm sorry for the delay.  Butttt it HOPEFULLY will be the last one for awhile because: WE GOT OUR LAPTOP set up last night!!!  It was sooooooooo nice to do things in 10 minutes that used to take me over an hour!  Sighhhhh...modern technology:)  So anyway, since we had MORE Maple Balsamic Salads last night, I figured I'd give you my weekend wrap up today:)

So I started the day on Saturday with one of Hungry Girl's latest smoothie recipes: 
  • 2/3 cup Unsweetened Coconut Milk
  • 5 Frozen Strawberries
  • 2 packets of Splenda
  • 1/2 teaspoon coconut extract
  • Lots of Ice
And I had to make this because I needed to find some use for the new fancy 'non-dairy' milk on the block:
I, not shockingly enough, was SUPERRRRRRRR excited to try this 50 calorie a cup stuff, but I must say: They really put the "UN" in "unsweetened."  As in, I think this stuff makes things even LESS sweet then they already are!  It was decent in the smoothie...but coffee or a bowl of cereal:  Not so much.  I think I'll stick to my Unsweetened Vanilla Almond Breeze...even if this stuff IS thicker & creamier.

After breakfast, we headed to the SECOND TO LAST Farmer's Market of the season!  We found some greatttt stuff (I already have my eye on an item for next week: Your gonna LOVE it!) and we managed to get another great haul for under $30!

...including those pretty cranberries;)  We'll see what I can whip up with them:)  I have a feeling it's either going to be good...OR a messy disaster;)  hahahahhahahahaha...stay tuned;)

And since our market days are swiftly dwindling...we thought we'd treat ourselves to a few of our favorites before they are gone for the next 5 months:)  I tried out a Pumpkin Spice bar from our favorite: Great Harvest....
OK...can I just tell you:  those things that look like walnuts??  Uh-huh....they are CINNAMON CHIPS!  Can I even BEGIN to tell you how IN LOVE with this bar I was?? :)  It was sooooooo good....

But I must say, it was a pretty close tie competing with Scott's blondie bar.  These seriously get the "It tastes like Christmas" stamp of approval!  TOOO DIE FOR!

The rest of the weekend consisted of sushi...
(from Kenji Fusion aka. THE BEST!  That place NEVER EVER disappoints!)

Anddd....Slow Cooker Chicken Stir Fry.....
Stir fry in a slow cooker?????  YEP!  Scott suggested this and at first I said "NO!," which quickly turned to "why not???"  It was PERFECT to just chop & drop and let all the vegetables wilt down on high for 4 hours.  The ONLY downside was having the house SCREAM of "Garlic & Green Onions" all while it cooked up!  We actually had to retreat out of the house and take Penny for a walk in the park, cause it was JUST tooooooooooo tempting;)

But soooooooooooooo worth the wait!  Scott says he thought the vegetables had more time to soak up all of the flavors while it was cooking all together for so long.  No fuss, no muss & totally fabulous!  Can't beat that:)

Soooo in other news, I thought I'd share the 2 things that made me happiest today:  The GLEE Christmas Album was released today AND Prince William & Kate are officially engaged:)  Wohooooo...I shall be donning my best red & green AND waking up at 5AM one morning over the summer to watch THAT wedding;) hahahahhahahahaha....just thought you'd enjoy my random ponderings;)

My mom always thought I should marry Prince William... wonder what went wrong! Still, she's happy that I picked Klark, and sometimes I swear likes him more than me! :)

As far as your posts... as usual, I'm completely inspired.... and I had NO idea they MADE coconut milk. I've got to find some!!
