Simple Saturday...

Hi everyone!  Hope you guys had a great weekend and are ready to start another week (albeit too soon....way too soon:)    We started Saturday with a COOOLLLDDD trip to the market (only 3 more left of the seasonSeems like the first one was yesterday!)  It seemed pretty mild out...until the wind blew and then it was FREEZINNGGGG...we zipped through pretty fast!
...but not before seeing some pretty FALL vegetables...plus the debut of fresh cranberries! (I soooo want to find a way to cook these that Scott & I would enjoy...they are just. so. pretty!  Any ideas??)

...and even despite a near breeze through:  we managed to get a pretty good haul, and all for cheap! We spent under $30 for all this good stuff:

...even a mini jug of farm-made apple cider (really good...not overly tangy like some ciders)

And since this was the FIRST Saturday that Scott & I have been home together in WEEEEKKKS, we thought we'd keep it super simple:)  Not to mention THIS simple Saturday meal called for one of my favorite, favorite snacks of all time:
Seriously, this bag is LETHAL for me!  As soon as I took my share, I told Scott to seal up the bag and hide it.  I can't be trusted around Fritos:)

And what, pray tell, were we using Fritos for????

Well, for my long lost chance at finally making FRITO PIE:)  See, you add a little frito layer to the bottom of your bowl...(some people just use a small bag of fritos as their bowl/dish)....

...then you top it off with a little BBQ Chili (or whatever chili you have leftover in your fridge;) 

...and then a round of all of the goodies: a little cheese, scallions, sour cream, a few more Fritos for good measure...
Scott, ever the skeptic, was not sure about this GENIUS idea...but his skepticism was quickly silenced once he tasted this deliciousness:)  The fritos gave just a great extra layer of CRUNCH to the chili.  We said we need to make chili more often because it goes so well with SO many things:
Can't go wrong with Chili, and this Frito pie was quickly dubbed a new favorite:)  Try it the next time you have leftover chili and need an excuse to eat Fritos as dinner to change it up a bit:)

Alright...well since I already know taco salads are on the menu tonight for "Monday Salads,"  I'll fill you in on our Sunday tomorrow....and it's going to be another "SWEET" one;)

I just bought a bag of cranberries that I have no idea what to do with either. I'm hoping something will come to me, other than sauce.
Your Frito pie looks like a big helping of comforting goodness. Can you really go wrong with chili and Fritos??? I don't' think so.

I was toying with the idea of roasting them with a little sugar...but I've NEVER worked with real cranberries before, so I don't know if they will be too bitter. Guess there's only one way to find out!! :)
