Fun with Fall Salads...Part 3....

Morning everyone....can I just say: VERRY difficult to crawl out of bed this morning:)  And not just because it's now in the THIRTIES in the mornings in Jersey, but I was achin after a double round of Yoga & Pilates yesterday.  But let me tell ya...that Bob is a miracle worker!  I already felt my obliques tightening back up after one Yoga session with him...love, love, love that DVD.  Well, maybe not so much around 7:15 this morning when I was in near-tears doing chest flies in Warrior 2...butttt I'm thanking him now:)  Again:)

Annnyyyyway....back to food as I was VERY happy to have a Salad Monday last night after what felt like tons of pasta the last few days.  I kept the FALL theme going with a Roasted Butternut Squash Salad....

I diced up the butternut squash, mixed them with a little pumpkin pie spice and roasted them in the oven for about 40 minutes at 350.  Look how nice and golden they become... 
AND delicious I might add!  QUITE a few of these DID NOT actually MAKE it to the salad because these little nuggets made a pretty good appetizer as well as salad topper:)

As for the rest of the salad:
  • Spinach
  • Blue Cheese
  • Toasted Walnuts
  • Scallions
  • My beloved cherry craisins
All topped with the pretty butternut squash.  I'm actually fairly obsessed with ALL of these ingredients lately (if you hadn't noticed:), because they just taste so Autumnal....and any time I get to use THAT word:  I'm a pretty happy gal:)
