Breakfast for Dinner....Fall Style...

Well...our cutting board last night looked like "Fall Cooking: 101" :)

As we both got to chopping to create our traditional FALL 'breakfast for dinner':)  ....
We make this dinner at least once a year, and after making an entirely TOO thin pancake from this recipe for the last 2 years, I decided to revise it a bit and came up with this:

The Heartier German Pancake:)

Batter
  • 1 1/2 cups flour  (we used Whole Wheat Pastry Flour)
  • 1 teaspoon baking powder
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon nutmeg  (LOVED the nutmeg in the 'cake)
  • 1 cup egg substitute
  • 2 cups fat-free milk
  • 4 tablespoons butter, melted
  • 2 teaspoons vanilla extract
Apple Mixture:
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup thinly sliced Granny Smith Apples
1.-Prepare batter by mixing all dry ingredients in a bowl and mix with whisk.  Make a well in the center of the flour and add all of the wet ingredients.  Stir until just mixed and let stand for 30 minutes (or the length of cooking the apples in step 2;)

2.- Preheat oven to 425 degrees.

3.- For apple mix, coat bottom of an ovenproof skillet (we used our cast iron again) with non-stick spray OR 1 tablespoon of butter.  Combine sugar, cinnamon & nutmeg and sprinkle evenly over bottom and sides of pan.  Arrange apples in a spokelike layer in pan.  (don't get too fancy...they only swim in the batter anyways;). 

4.  'Accidentally' drop an apple or two so your puppy doesn't feel left out.   
Oh...or is that just me?? :)

REAL 4.-  Cook apples over medium heat for 8 minutes or until mixture is brown and bubbly!

5.-  Slowly pour batter over apple mixture and bake at 425 for 30 minutes or until center is set. 
6.- Carefully loosen pancake with a spatula.  Flip to reveal a sugar crisp crust and your now non-spoked wheel patterned apples;)

We liked this because it was a littttttttle bit THICKER than the normal oven pancake.  The batter had a nice custardy nutmeg taste...

...and the cast iron skillet made a GREAT sugar crust on the top!  Yum!

And as our traditional side:  Hungry Girl Butternut Squash Home Fries!  You seriously can NOT believe how good these are....especially with the savory-ness from the peppers & onions, but the sweet kick from the pumpkin pie spice, which I heart:)

And can you believe...in less than 2 weeks our apple inventory has whittled from this to THIS:
We don't mess around:) 

Yeahhhhh....it's Friday!  Which also means it's potluck Friday at EKat's!:)   


And "DOUBLE YEAH" because it's my last day of work for a week!  We've been busying trying to get all our 'research' in before heading off on our Anniversary trip...ya know, like "Where to get the best Frites in Montreal"....only the important stuff! :)  But before we go, I have ONE more "crossover ingredient" for you for tonight's dinner...and it's NOT Apples:) hahahhahahahhaa....

I love breakfast for dinner...especially if it was this pancake! That picture of the caramelized top is making my mouth water. Yum!
