A close race...

Wednesday recap:

8:00am:  Coffee with creamer

9:30am:  Breakfast- Perfect Fit pancake with Almond Butter & syrup
So for my birthday, 2 of my friends got me the Tone it up "Perfect Fit" protein powder to try out...(my kinda giftJ

...and as a pancake, I thought it was great.  The idea is you swap all of the 'flour' with protein powder and it still cooks up perfectly like a pancake...
  • 1 scoop protein powder
  • 1/2 mashed banana
  • 1 egg white
  • 1/2 tablespoon almond milk
  • 1 teaspoon cinnamon
VERY TASTY and VERY FILLING!  Perfect fit for breakfast before:

10:30-11:45am:  Power Yoga
What a class.  My teacher never fails to bust out some crazy combinations....a 'catch leg' reversal table & half moon to tree were in his crazy repertoire yesterday.  Love it cause it always keeps the body guessing what's next...and it's NEVER boring!

12:30pm:  Lunch- "Perfect Fit" Cherry Smoothie

OK, here's where things got a little 'interesting.'  I had made this smoothie with 1 scoop perfect fit (which is a big scoop for 70 calories), 1 cup skim milk, flax seed & frozen cherries, which is usually my ultimate tasty combo.  The only 'problem' though was this protein powder REALLY does not taste like my "Biggest Loser" one I normally use, and you could REALLLLLLLLY taste the difference in this smoothie with so much protein involved and not a lot of filler.  THAT being said, I pretty much can handle the MUCH MORE 'earthy taste' when the ingredients list looks like THIS: 
I mean, ya kinda can't argue with THAT.  I had made a banana/oat smoothie with lots of spices & 1/2 a scoop of Perfect Fit on Tuesday and it didn't seem as noticeable, so maybe I'll try it out again today and see if the 'fillers' really affect the flavor.  Either way, it was something I felt GOOD putting in my body, so that's totally worth it.

2:30pm:  Snack- MORE coffee

5:00pm:  Dinner- GUACAMOLE CHICKEN NACHOS!
We're on a roll this week with AWESOME dinners and I'm betting that this one was our favorite yet, even if I'm still INLOVE with that "cauliflower sauce!", but how can ya ever compete with NACHOS??

First up, I took 2 burrito-sized tortilla and cut them into each 6 slices.  Popped them on a foil-lined cookie sheet and baked about 10 minutes at 375 or until they are JUST about to turn brown...

Meanwhile, I had poached some chicken breast and gave it a quick shred once it was cooked through...

Next I tossed in 1 avocado, a dollop of non-fat Greek yogurt, salt & pepper and 1/4 cup of minced onion... 

Mix everything together, mashing the avocado as you go along.  The larger the chunks of avocado left in the mix, the better!J 

Next, pile a little of the chicken/avocado on top of each chip... 

...and cap em off with a little sprinkle of shredded cheese... (I used low-fat Mexican blend, but any variety would be fine)

Pop em back in the oven for about 5 minutes or until the cheese melts and DINNER IS SERVED! 

Creamy guacamole & gooey chesse + baked chips & lean chicken = a 'decadent' dinner you can loveeeeeeeeeeee and still feel good about.  Piling these nachos with even MORE veggies (like grilled corn or diced peppers...which I didn't think of until exactly a 1/2 hour AFTER dinnerJ) would be a great way to bump these up in the nutritional department even MORE...but on the "nacho scale," I think you're doing PRETTY GOOD with these babies!
You'll love em...esp if you're as GUACAMOLE-obsessed as we areJ.  Although Scott can't decide if he likes these or the Buffalo Chicken Nachos the best.  But I'd say it's a pretty close raceJ

5:30-6:30pm:  Body Jam

I think I spent nearly the ENTIRE cool down of Jam thinking about ice cream since we were SO. DAMN. HOT all throughout class last nightJ  But justttttttttt as I was about to sit down and down a dish, Katie got sick and put a kibosh on our 'relaxed evening' plansJ  It happens.  Guess I can thank her for saving me some calories for the nightJ  Hahahahahahaha  (ps- she seems to feel better so far...knock on wood)
