Tuesday Recap:
6:45-7:30am: 3 mile Walk Away the Pounds with 8 pound weights
Still SOOOOO tough after all these years!!
8:00am: Coffee with creamer
9:30am: Breakfast- Waffle with butter & flax
11:30am: Lunch- Salad with cheese, trail mix, olive oil & sea salt
1:30pm: MORE Coffee with creamer (it was a 2-cup kinda day!)
2:30pm: Snack- Apple with peanut butter
6:00pm: Dinner- Spaghetti Squash with Crispy Sage & White Beans
So I thought I'd try my hand at the new "food blogger craze" of serving spaghetti squash right in the "boat" of the shell. And I think I whipped up a pretty yummy filling in the process.
First, slice the spaghetti squash in half, scoop out the seeds and bake face down on an greased cookie sheet at 400 degrees for about 30 minutes or until squash is soft when squeezed.
Next, run a fork through the center and pull out all of the 'spaghetti strands.' This takes about 4.2 seconds...
While the squash was baking, I got the rest of my cast of characters ready to roll...
- 1 drained & rinsed can of white beans, toasted in a dry skillet until crispy
- 4 cups of shredded kale (tossed in a bit of olive oil, salt & garlic powder) baked for about 20 minutes (right along with the squash)
- 4 diced garlic cloves and 6-7 torn sage leaves heated in 2 tablespoons of olive oil until garlic is light brown & fragrant and the sage is crispy
- 1/4 cup Parmesan
OK...and I cheated. I ATTEMPTED to mix the ingredients RIGHT in the boat, but rather than try to split everything in half, I just tossed it all in a bowl, gave it a good mix and spooned it back in the shells...
Finally I topped the boats with a few pieces of fresh mozzarella and tossed em back into the oven until the cheese melted...(or SORTA melted. I was too hungry to waitJ)
LOVED this combo of flavors. The sage REALLY permeated the ENTIRE dish and gave it a great herb-y, seasonal and cozy taste to every bite. And the kale & white beans really gave it some UMPH in the 'filling & nutrition' department. And...well, the cheese? Can ya ever complain?? J
8:00pm: Dessert- Candy Corn Sugar Cookies
So I made these for a play date with my friend's kids...until 'sick face' went and forced us to postpone:( I actually tossed some in the freezer for our rescheduled date and I'll let ya know how they stay! Meanwhile, I saved a few for us to have and the rest went along with Scott to work!...
Aren't they so cute?? They're just as yummy too...but if you try this recipe, DON'T let these overbake! They dry out REALLY easily (despite the 1 1/2 cups of butter involved!) So fun for this time of year!J
Well...speaking of sick face, those little ninja germs came and attacked me so I woke up with a stuffy head this morning too. Here's hopin we all get it out of our systems now before our busy weekend hits!
