Morning everyone! Hope you guys are feeling good todayJ
So after our variety of fried foods from "Chicken Holiday" on Sunday night during the big game, I was suuuuuuuuupppppppperrrrrrrr ready to get "back on track" yesterday and tried to eat as 'cleanly' as possible. Along with chugging down LOTS of water, I started my day with a bowl of steel cut oats mixed with pumpkin, chia seeds, maple syrup, nutmeg, cinnamon & a sprinkle of sliced almonds...
I had been having spinach smoothies, flaxseed pancakes and pineapple chobani yogurts for the past few weeks, so it had been a hot minute since oatmeal had been made in my house (after having it nearly DAILY through December!) It was a nice reunionJ hahahahhahahaha
For lunch, I had went through a variety of leftovers from my fridge...but the only thing I REALLLLLLLLLLLLY wanted was SALAD:
In the mix:
- Spring blend lettuce drizzled with TJ's Pear Gorgonzola Dressing
- Sliced strawberries
- handful of chopped & toasted walnuts
- sprinkle of crumbled goat cheese
Soooo refreshing & good. Strawberries are OUT OF THIS WORLD right now! I couldn't believe how sweet they were when I picked em up on sale at the grocery store this week. I thought they were going to be 'winter waxy,' but NO...so good!
For snack, in my attempt to quell my DAILY afternoon CHOCOLATE CRAVING I've had lately, I had picked these up at the store last week...
I figured I'd try ANYTHING to get a chocolate fix that was under 100 calories a serving. They work pretty well. *Emphasis on the 'pretty'...hahahahahhahahaha...sometimes you just need the REAL STUFFJ
And dinner was a simple one. Scott had some leftovers to take care of and since he does NOT like seafood, it was finally my chance to have something I had been craving for A WHILE:
Less the 10 minutes + craving conquered = happy! J hahahaha
So I told you yesterday how, along with chocolate, CHEESE is my other favorite food group at the momentJ I have a fun little recipe in store for tonight that takes a particularly guilty dish and makes it a litttle bit on the more healthy side.
