Hey everyone! So I finally got Blogger to work today...and I was so excited because I couldn't wait to show you the pretty, and dare I say "SPRING-Y" salad I had for dinner last night...
Isn't she a beaut??
In the mix:
- Seasoned shrimp
- 2 crumbled slices of TJ's bacon
- 1 diced roasted red pepper
- 1/2 orange segments
- Orange Poppy Seed Dressing
(There was also suppose to be diced avocado...but let's not discuss the FURY that was had when I discovered they were not ripe enough to use yet. This is a disaster of epic proportions for a 9 1/2 month pregnant personJ)
For the shrimp, I first crisped up the 2 slices of bacon. When I removed them from the pan, I tossed in the shrimp that I had coated with this dill seasoning I had gotten from Tortola.
Maybe that's why it reminded me of sunshine???
It was either the influence of the islands or the bright & citrus-y dressing I whipped up in .2 seconds...
- 1 tablespoon olive oil
- 1 tablespoon white balsamic vinegar
- Juice of 1/2 an orange
- 2 teaspoons poppy seeds
- salt & pepper to taste
Light and bright. The pairing of the shrimp and citrus definitely gave it a "close my eyes and pretend I'm on the beach" feel. And who couldn't use a little toes in the sand daydreaming in mid-February? (even if I'm STILL keeping my fingers crossed for a damn BLIZZARD this year!)
I have a MUCH more "winter-y" dinner planned for tonight. One part of which I had started around...hmmm...7pm last night. Any guesses??
