It all seemed so promising.
I have been LOVING lemons lately and stumbling on this recipe in Rachael Ray's magazine for a lemon & ricotta pizza seemed like the perfect Saturday night dinner.
I broke out my
...and "blanched" them in salted boiling water for 1 minute, which was SUPPOSED to take the OVERLY tangy taste out of the lemons.
We'll get back to that part in a sec.
After I stretched out my dough, I topped the pizza with a mixed combo of 3/4 cup light sour cream & 1/3 cup half & half and dotted it with about 1 & 1/2 cups of part skim ricotta cheese...
...and then a niceeeee layer of thyme, salt, pepper & LOTSSSS of diced garlic clovesJ
And finally...the drained & dried lemons.
Now, I knew Scott wasn't gonna be too gung ho on my EXCESSIVE lemon shenanigans, so I topped his half of the pie with mozzarella cheese. The "his & her" version of pizza, if you willJ
15 minutes in a 450 oven and 5 minutes under the broiler and the pizza came out crisp & smelling like heaven! I could not WAIT to dig in!!!
Which was all fun & games until I took about my second bite of the lemon topped pizza....
...and declared it inedible!!! It was just BEYONNNNDDDDDDD BITTER! All of the lemon slices had to be relegated to my napkin and the REMAINING pizza was great with just the HINT of lemon taste...but those lemon peels were just WAYYYYY TOOOO MUCH! Maybe a PEELED lemon would have been better?? But that whole blanching business did NOTHING to take away the bitterness. Bummer.
So the winner in the his & her pizza battle was definitely Scott's "all cheese" side! Thankfully, he was willing to shareJ hahahahhahahahaha
At least we had the last of the TJ's Salted Caramel butter cookies to cheer up my lemon dissapointmentJ
That & a viewing of "The Hangover 2"...even if I did nod off half way throughJ At least it was funny up until then!! hahahahahhaha
Although one thing yesterday that did NOT disappoint: I had went to Cracker Barrel with a friend for breakfast and indulged in their new Cinnamon Pancakes...
Holy crap...they were some of the best pancakes I've ever had in my whole life. They tasted almost like FUNNEL CAKES with thier crispy edges. YUM!!!! I'm rankin these babies right up there with Clinton Street Baking Co. & The Brownstone Pancake Factory...they were sooooooooooooooooooooooooo good!!!!!!

Wouldn't it have been better with just lemon zest or big long strips of zest.
I think that's a good suggestion, Lynn! The whole lemons was just SOOOOOOOOO OVERWHELMING...bleh!
